Thanks! I was hoping that someone would have a recipe that they've tried out. I'm sure I'll try out the one from the kitchenaid forum too since I'll be making the dough in my mixer.

NICOLEE: I made bread in my kitchenaid all the time, before I got my bread maker. Here is what I did: Dissolve 1 T of yeast in one cup warm water, and 1 T. agave. When it starts to bubble, stir in 1/3 of a cup of vegetable oil, or melted butter, then add it to the work bowl with 2 cups of ww flour and one to two teaspoons of salt. Using the dough hook, turn on the machine to stir. With the machine running, add flour, about 1/2 cup at a time until the dough balls up around the dough hook and cleans the sides. (I think I end up using about 5 cups of flour) Turn to 2, and let knead for about 3 -5 minutes. When dough is springy and cleans the bowl, it is ready. Grease the top, cover and let raise until double. Punch down, form into two loaves, put in greased pans, cover and let raise until about 1 to 2 inches above top of pan, bake at 375 for about 30 minutes. Loaves should sound hollow when tapped. Cool in pan for 5 minutes, then remove and cool on a wire rack. Resist the urge to taste the hot bread. You may not be able to stop! :)
If you can find Wheat Montana Prairie Gold flour, it REALLY makes a difference in how the bread turns out. I get it at Harry's/Whole Foods, where they have a grinder and you can grind it fresh. Its a light wheat and the bread comes out light and delicious! |

Hey there. Well, after this big homemade bread issue, I decided to make some. I don't have a breadmaker anymore ... it was acting up so I put it out for one of those charity pickup things. My KA mixer has also been acting up and I *told* DH about it but apparently he wasn't interested. Today, however, I reminded him that it was being cranky so after work he took a look ... seems as though the paddle was stuck. He got it unstuck and everything was great, except that I couldn't find my dough hook. I went ahead and made the dough using the paddle and now it's rising for the second time. I did use that Splenda brown sugar but it's a 2-to-1 thing so I had to keep an eye on the amount I used.
Will keep you posted but for now, it smells good in here. I'm also making pinto beans for the next few days' lunches ... especially since my tuna salad I made today ended up being very untasty and stanky. |
MANDI: :welcome3: We would love for you to join us. Popcorn is really NOT legal, but ok for an occasional treat. Your menu looks good, but watch the starches. You have three: the bagel, the triscuits and the pasta. It is better to keep them to two or three a day if you want to lose. Other than that, it looks good. There is not a magic number to follow for fats. Just chose wisely, and you should be fine. If you don't lose, you can tweak it later.

Well, did I heed that warning about staying away from the bread while it's warm? Noooo ... let me tell you what. This is the best stuff! While it's not a bread you'd make a sandwich with, it's a very good, full-bodied bread! I was VERY pleased with it (but not so pleased with myself for tasting and tasting and tasting ... :o )
So while I'm in the mood (and while that darn mixer is behaving!) I think I shall go ahead and make another batch tomorrow -- maybe this time a white or egg bread. I dragged my old recipes out from many years ago. When my kids were small, I made it every or every other day and perfected a formula for a very good white bread. If this "habit" keeps up, maybe I'll get another machine just for the sake of convenience. |
Good evening..... Well, I ate too much tonite and feel it.... I did a haircut at a friends house (have my cosmetologist license..just do stuff on the side now) and we had red wine and bruschetta wwith bread. Gotta tell ya though- we had both ww baguette bread and white bread and i snuck some white thinking "what a treat" and it was totally tasteless and boring. Yippee for training my tastebuds!!! But I DEFINITELY ate more than I should have. Oh well, could've been worse!!:moo: :moo: :moo: Must've been a thing in the air for eating bread!!!! Carbos are definitely my weakspot. I really have to limit my intake. It is sooo tough though. Especially fresh baked bread..........

Well I did not sleep very well last night either... must have been a bad SB night ;) so I will have to hit the sheets extra early tonight. I have decided that I really just hate my scale.. I got on it this morning and it was up a pound and a half... oh well... I think the battery needs replacing so I will do that and see what happens. Good morning ladies.
Dinner last night was chicken/rice bake. I can put it in the oven while we are at the gym and it is done when we get home. We also had broccoli. I ate my piece of chicken and a bite of broccoli. I wasn't very hungry. I think eating after the gym curbs my appetite. My stomach hasn't felt good yesterday or today. Plus I ache all over and my feet are killing me. Got in 70 minutes of cardio last night. I promise Monet to post on the exercise board. ;) Monet, congrats on your 1.5 loss. Keep up the good work. Toni, I'm surprised that you all are snowed in. We only got about 1/2" Saturday, gone by noon. It's supposed to warm up here today and tomorrow. Stay in and be warm. Munch, I hope the girls enjoy the piano. My sisters both played but I never did. I think they sound so pretty. I'm sure you will work off that bread this week. Crystal, :wave: :hug: Mandi, Welcome, Of course you can join us. Your menu looks great to me. Just watch your straches. Good morning guys. Today's the big day! It should be here by 10:00...that's when UPS usually runs at my office.
Edit: I just found out that the delivery has been rescheduled for tomorrow. Needless to say I'm not a happy camper right now. Last night for dinner I had the southwest taco salad from Wendys minus the tortilla strips and the chipotle ranch. I did put 2-3 pack of sour cream in it and it was GREAT!! It's basically a normal green salad, with tomato and cheese and you add the chili. Okay. Here's the recipe that I'm going to be using for Aaron's birthday cookie and I'd like you guys to see if it can be SB tweaked in any way: 1/2 c shortening 1/2 c butter or margarine (I have Smart Beat, would that be okay?) 1/2 c granulated sugar (splenda) 1 c packed brown sugar 1 tsp baking soda 2 eggs 1 tsp vanilla 2 1/2 c all purpose flour (ww pastry flour) 1 12 oz pkg semi sweet chocolate chips I'm at a loss as to what to do for the brown sugar other than get the splenda blend even though it's not legal. I'd really like for this thing to be as legal as possible cause if I spend all day working on it, you'd better believe I'm going to eat it. The icing calls for 4 cups powdered sugar and I don't think there's a way around that. |
Good morning. Ughhh... I am so unmotivated. I've spent the last week sleeping till 8 and napping all afternoon with the kids. I'm so ashamed. And I've been eating CRAP, CRAP, CRAP!!!!!
Yesterday I read but didn't get to posting. My menu for the day was.. B-Brown Rice Crispies w/ rice milk. S- 2 grahm Crackers L- Chickfila Southwest Salad, and a few of Selah's french fries ( Next time I'll get the fruit cup for her. Less tempting) D- Meatloaf, green beans, Kale with Pine Nuts and more potato wedges than I should have had S- Brownie w/ vanilla ice cream, but didn't even eat 1/2 of it So, I know it's not good, but I'm posting it regardless. I need to just do it. Got on the MM this am and it wasn't as bad as I expected. 193.5, so still under the 195 I started at. I'm not trying to be psyco about the actual weight. But it was encouraging, sinc eI feel like I msut have gained at least 10 lbs with my junk-fest the last week. All this ttalk about bread baking makes me want to make some, too!!! Except that I jsut bought 2 loaves of spelt bread from the Farmer's Market on Satruday. One is in the deep freeze, but I'll wait until the other is done to bake. Solly- Hope you feel better today. I'm STARVING after my workout, but that maybe the munchkin's fault. Maybe that will work for me after July :) Monet- Good job on the loss :) Selah misses you at the Market. We went on Saturday. BIG mistake. Trav wanted to go with us, but it was a ZOO!! Sorry about being MIA. I've dust been down for no reason. Crazy hormones.. Princess- Don't you hate when the scale does that up and down dance? I thinkI may stop weighingin the next month and jsut go by my OB appt's. Although, I mostly feel encouraged when I do weigh, sinc eI'm looking at gaining instead of losing anyway.. I don't know. I should jsut throuw it out the window! Muncher- I'm the same way with white bread. I was shocked once when I 'cheated' to find that it tasted bland and gross. I'm so much happier with the flavor of WW or Spelt!! Good for you. Isn't that a great moment to realize your body is actually starting to want the right thing? Katpo- I don't thinkI've EVER been able to resist fresh bread in my life!! I used to make 4 loaves once a month and the first one out got cut IMMEDIATELY! It was like a christening... maybe not? Mandi- Your menu looks great. WELCOME!!!!! I think 3 carb servings is the max. But don't listen to me. Did you see my posted menu above? NOT good.....sigh.... Nicolee- Bummer on the Splenda Brown SUgar, although I try to only use natural sweetners anyway (agave and brown rice syrup, which isn't really legal). Nicolee- Would regular Splenda work? It's powdery?
