Tonight is london broil, spinach and corn on the cob from a farm out east on the island. The corn was mucho expensive but it is the best I've ever had.

Last night we had baked rotini and a big salad. Tonight, I think we're going to have either apple chicken with white wine sauce or chicken and roasted autumn vegetables in the crock pot. I guess I better get cracking if I'm going to do the crock pot dish
chicken kabobs alternated with orange pepper and onion slices cooked on the grill, greek village salad. Dh made a ceasar salad out of it tonight. I bought that SBD ceasar salad dressing but am happy with the kabobs staight up for now. I look forward to branching out and learning and creating more recipes with you all as I progess in theplan. I only took a few quick peeks into the recipes thus far during my initial phase .
Making a SBD friendly version of Shepard's Pie! (Cauliflower mashed taters, veggies mixed and cooked with extra lean ground beef and veggie stick used to make a sauce). It's yummy!
I picked up a lovely spaghetti squash yesterday and will serve it with veggies sauteed in evoo and some really good parmigiana cheese and veggie sausage.
I think I am going to try the lentil and vegetarian saugage soup- looks divine! If I can figure out how to cook it in the crock pot so I can get all my tasks accomplished today!
We ended up not having the fish on Tuesday like I planned so we're having it tonight:
Egyptian Red Snapper w/ Red Pepper Mint Sauce, WW Couscous, and a green salad.
I'm having a craving for greek food, so I'm making taboulleh, and greek lamb patties with tzatziki sauce in a pita. DH wants a tomato/onion salad as well.
Also, Hmac, the pumpkin bread is in the oven and smells absolutely divine.
