So I had to share. There are very few vegetables I like and getting my 4 cups has been my biggest struggle so far. Tonight I tried jicama for the first time. I sliced it thin and added some truvia sweetener and some cinnamon and tossed it in a bowl to get it all covered. It is delicious! Give it a shot!

Ha! I totally planned to do the same tonight but I left my jicama too long and it got moldy :(

Did you cook it or just have it raw? I'm not a good veggie eater and I need an alternative to bell peppers!

Sounds good! I've never tried jicama, but will buy some next time I go shopping. I'm going to make baked turnip fries this week from a recipe I found on Pinterest. Pinterest has been a great source of food ideas for me.

I just sliced and ate it raw. It was in my fridge so it was nice and cold. Very similar taste and texture to a crisp apple! Definitely one of my new faves!

that sounds really good. i'm sick of eating broccoli, peppers, and cucumbers every day. must try this.

Haha. This is me, too. Although I had some darn taste green beans today and made a beanless chili to get some tomatoes in. That helped relieve the vegetable fatigue. Will definitely try the jicama suggestion though as I could certainly use more variety.

Monday. Weigh-in day. Had a feeling the scale wouldn't move. I wasn't to far off. Down 1.6 this week. Which I guess isn't bad considering my past 2 have been big numbers. But really hoping for 3 or higher next Monday!

Wantanewme thanks! Its frustrating sometimes to see such small numbers. I'm one of those people that can look at food and gain 10lbs but I'm also one of those people that wants to go to bed weighing 170 and wake up 120 haha Impatient doesn't begin to describe me.

I just realized that we have the same stats (your an inch taller) Its encouraging to find people with the same goals as you. You seem to have been doing great so far! Keep it up!

Great job! I feel EXACTLY the same way. My weight loss is pretty much crawling at this point, but it's great to see we are close in stats so your losses are encouraging me.

Sounds great! I also read a recipe where you can slice a zucchini length wise and then slice it so it's a bunch of little half moons. Then sprinkle with apple pie spice and bake it for a bit. I haven't tried it but just might satisfy a dessert type treat. I will post if I do.
Btw, jicama is my favorite snack. I slice some up and some cucumber, dash it with apple cider vinegar and a little water, shake it up, refrigerate and it is a super yummy mid day snack! You could throw some onion in there too.

Monday WI here too...I was down 1.2. I am feeling the same way, but if I am being totally honest, I did not get all my supplements in and I "thought" I was getting plenty of water. I have definitely slacked on my writing everything down and maybe I'm not doing as great as I think I am. Definitely baffled by the scale this week! I WILL BE IN THE 150'S NEXT WEEK!!!
Since I was feeling down about the scale and also with everything going on I realized that I did not get my 10lb reward. So I drove my booty downtown and bought my Kendra Scott earrings and they are marvelous!! :)

Good morning all! Was MIA this weekend since we were so busy. Now it's just back in the grind of daily life. Lots to do over the next week to get ready for the upcoming holiday. We are traveling, so LOTS of planning to do. I'm already thinking ahead about packing my foods and making sure my mom has lots of salad and naked veggies for me.

Other than that....not much going on here. I hope everyone is having a wonderful OP IP day!

Just had my weigh WI - lost 2lbs. I thought I gained so I am happy.
