So sorry jaymeskelt

I am in Baton Rouge also, but my coach has me choosing individual packets the first few weeks, so that I won't end up purchasing a box of something I won't like. Personally, I like the potato. How about making it a little thinner than the directions (but not as thick as the soup directions) and mixing up some well seasoned vegetables with it? Mushrooms and finely chopped brocolli come to mind.
As far as the tomato basil soup, I haven't tried it. I have read here that others dislike it also, but someone posted a recipe on how to make it as a flat bread. This sounded like a nice option. Maybe sprinkle some oregano and italian spices in it first, and make yourself a veggie sandwich out of it?
Also, it wouldn't hurt to call and see if your coach allows returns? You might be surprised!
Hang in there!
