So I had a little issue at Old Navy and didn't get home in time to start the Crockpot. But here is the recipe. I got it off of a hometown-area message board and thought it sounded amazing.
It worked out to 6 WW points per serving. Adjust up or down if you use different ingredients. I made bulgur on the side, so that added 2 points.
1/2 green pepper, cubed
1/2 red pepper, cubed
1/2 yellow squash, cubed
1/2 zucchini, cubed
1/2 tomato, diced
1/2 onion, slivered
1 large carrot
6 oz fresh green beans, cut into thirds
2 small potatoes
2 cloves garlic
1 tsp minced ginger
1 tablespoon curry powder (I used McCormick's)
1/2 tbsp coriander
1/2 tsp turmeric
1/2 tsp cayenne pepper
Salt to taste
1 cup vegetable broth
1/2 cup unsweetened coconut milk
1. Put 1 tsp of oil in crockpot (Note: I used spray!) and make sure ceramic pot is coated evenly.
2. Add everything except coconut milk. Stir to mix. Add water if needed to cover veggies.
3. Cook on low for 5-6 hours, until veggies are tender. Add coconut milk half hour before serving.
4. Garnish with fresh cilantro and scallions.
5. Serve with basmati or jasmine rice.
I made cider-braised chicken thighs last night -- I'll post that too, since they were amazeballs.
Cider-Braised Chicken Thighs with Sweet Potatoes and Sage
(8 Points, serves 6. You can use regular potatoes but it might affect the calorie count. I made rice pilaf for the side dish.)
1 1/2 pound(s) skinless chicken thigh(s), about 6 thighs
1 1/2 tsp kosher salt, divided
1/4 tsp black pepper, freshly ground
1 Tbsp canola oil
8 medium shallot(s), thickly sliced
1 clove(s) (medium) garlic clove(s), minced
2 cup(s) reduced-sodium chicken broth
1/2 cup(s) apple cider
1 Tbsp apple cider vinegar
2 tsp fresh sage, minced, divided (or to taste)
1 Tbsp thyme, fresh, use 4 whole sprigs
1 1/2 pound(s) sweet potato(es), peeled, cut into 3/4-inch cubes
Season both sides of chicken with 1 teaspoon salt and pepper. Heat oil in a large nonstick skillet over high heat. Brown chicken in batches, flipping once, about 2 minutes per side; set aside.
Reduce heat to medium and add shallots and remaining 1/2 teaspoon salt to pan; cook shallots, stirring frequently, until softened and beginning to brown, approximately 5 to 8 minutes. Add garlic to pan; cook, stirring frequently, for 1 minute.
In a small bowl, combine broth, cider, vinegar, 1 teaspoon sage and thyme sprigs; add to pan and scrape down sides of pan to loosen any brown bits. Increase heat to high; bring to a boil and cook until mixture reduces slightly and flavors blend, about 5 minutes.
Add chicken and potatoes to pan; stir to combine and reduce heat to low. Cover pan and simmer, flipping over chicken and stirring potatoes halfway through cooking, about 30 minutes.
Remove thyme sprigs from pan; stir in remaining 1 teaspoon sage. Yields 1 chicken thigh and about 3/4 cup sweet potato-shallot mixture per serving.
If the final sauce isn’t thick enough for your taste, use a slotted spoon to remove the chicken and sweet potatoes from the pan. Then increase the heat to high and reduce the remaining pan sauce to your desired thickness. (Note: I had to do this.)
I used a dutch oven on the stovetop to make this and that was good.

I've just weighed in at 4lb UP, nooooooooooooooooooooooohhhhhhhhhhhh! Although, it's TOM, I've had a very naughty week food wise, done no exercise, got no sleep, so I don't really expect more. I'm just sick of yo-yoing!
So, this week will be a good week, the start of many, no more yo-yo effect!

Just posted my weight. A rather discouraging morning, scale jumped up 2.4 pounds overnight. Yesterday I was showing a nice loss for the week and now today I gained back that loss plus 0.6. I blame pending TOM and too much sodium yesterday. I debated whether to post yesterday or todays weight, but decided to just post todays weight (gain), since I have always posted Sunday weights, and hopefully next week will be a good one!

So, I've been naughty the past couple of weeks ... but seeing that I'm only 7.1 away from the 150s (aka MagicFairyHappyLand) has lit a huge fire under my butt.
In three days, I've worked out more than I worked out in the past three weeks (4 hrs, 15 mins). I'm also trying to stick to my WW dailies only until I go to my MIL's on the 19th.
Of course, I had too much candy corn at last night's party, but I'm all good now.

I looked @ some WW recipes online but they didn't have nutritional break-downs I have problems like I love peanut butter cup candy, etc. If I was not a KOP in my TOPS club I know I would be wearing a size 14 again instead of a size 10, but it is hard to maintain my weight goal. I have to make a small goals or I'll blow-it & beat myself up when I gain a #. I need to reach my new Goal of 141# a 10# loss, if anybody wants to be on a buddy list, lets do-it & not add any more pounds to our curvy-hot body's in 2011. My hubby just walked over & tried to give me a 'huge spoonful' of his 'hot fudge-brownie ice cream sundae' that I put in the freezer for His dessert tonight...I gotta go get a pudding cup now....
no weigh in for me, as i'm still interstate on a mining camp with no scales.
I've been a bit slack foodwise the last 3 days and my portion size has crept up and i haven't exercised as much, so i'm glad i can't get on the scales.
But it's Monday, and tomorrow is November, so i want to nip this little lapse in the bud and get back on the straight and narrow STARTING NOW!
Jomatho jumping up in weight like that must be really annoying, but i think it's good that you've recorded your Sunday weight, and it'll mean that you'll soon move away from it for ever!

minidoodles i've not had anything sweet since i started this diet in August, apart from fruit, so i don't even want to think about recipes for making sweets lol!!
Ack forgot to weigh this morning- ill just put in yesterdays. I may be wrong, but was I the top loser last week?? it was never announced... yay.. not so this week. gained it back... grrrrr...
My goal this week is to log all my food. I've been really slack about it lately. Tomorrow's halloween and I just realized I told my sister I'd go to her house to walk w/ my neice and nephew... but I have a training session too...aggg.. I think it's going to end up being a lot of running around Ah well. they'll be cute and worth it, right??

My name is obvious I got eating desaster written all over it. I am will to take this challenge. I started the program 3-4 days ago and by christmas I will have gone from 200 puonds to 130 pounds. Or I get my chalean extreme refund. Tell me what I have to do for this challenge and I will do it. If not I am working on my own and you all have the privelege of knowing I failed or finished.

Slimmer down now just put up the weigh ins for the last two weeks, I've been really busy with uni work and my gran dying and stuff so just couldn't get on to do it last week.

OK, so I'm sat here starving, we had no milk in this morning so I skipped brekkie, no idea how I used to do this everyday! Can't wait for a bowl of homemade soup for lunch and then healthy tea. I've got a job on cutting out the snacks this week after I got back into the habit last week, not good!
Really hoping for a good few weeks leading up to crimbo, COME ON!

Are you really expecting to lose 70 lb in less than 2 months? I'm quite sure Chalean Extreme doesn't promise anything that drastic. Nor is it realistic to expect those results, regardless of what Way of Eating (WOE) you choose.
You will be much happier if you set realistic (or even modest) goals and actually attain them. By setting unrealistic goals, you are just setting yourself up for failure and disappointment.
I hope you can find the combination that works for you and I look forward to seeing your progress.
^ Agreed 70 pounds in 2 months is just to much. Slow and consistant is the best way to lose weight.
Well I missed the weigh in again I went ahead and added my info anyway. I've been seriously off plan these past 2 weeks but still managed to drop half a pound.
