I'm totally confused...are Applebuddy and Sail7seassoon the same person? Somedays I'm just so blonde...
Sail7seas and Applebuddy, did I do something wrong? My rolls are very pretty; I browned them lightly - they took 30 minutes. But I split one to make a burger bun - bad plan. They were so thin, they didn't hold the burger at all. So I ate it with a fork...delicious, but not what I had in mind.
So, are you supposed to use two rolls when you want a bun or a sandwich, or did I do something wrong? Oopsie...

Yes... same person... I'm Raquel.... sail7 is the username.... applebuddy is what/who I am.... I work at applebee's and we all call ourselves applebuddy because we all work together to help each other out.
As far as the oopsie rolls go... I use 2 of them... each one is about 1 carb each...at least that is what was on that website. Sorry for not mentioning that in the first post. Also, the longer they sit the better they hold up. I let mine rest on the counter for a day before I use them. (Or at least for a few hours.) I don't store them in a plastic bag since that tends to make mine too soft. I do, however, store them in a paperbag after the first day.
I saw this on another thread and wondered how useful it would be for me here... they were counting carbs and posting them.... I figured I can try that out and post what I think/hope are to be the correct carb counts in the food I eat.... so here goes....

So, that is about 37 carbs today. I may have added too many for my salad at lunch... I don't have a carb book so I am sure I am wrong with that particular count. Always good to be high and not figure too low. I am sure my sodium intake was through the roof today... I'll work on that a bit more tomorrow.
Breakfast will be the french toast I have been talking about.... I have now just talked myself into them. I am going to take lunch to work with me tomorrow I just bought some drumsticks and I am going to try a recipe that I saw posted in another thread. It had something to do with parmesan cheese.... cleaning out my cupboards today I found 3 UNOPENED containers of parmesan....lol.... I am fully stocked if I decide I want to go on a spaghetti only diet...lol
I made the french toast just a moment ago and they were so yummy!! Only change I would make for next time is to use a sugar free jelly or even a fresh fruit compote.... I now remember why I still have sugar free syrup left. Talk about yucky!!
I made taco soup for tonights dinner using the taco meat I had left over. I did toss some corn in there for the hubby, but, otherwise it's pretty good.
YAY me, I get to work this morning. Hopefully I won't get phased off the floor too soon.
I am trying to think of something to bring to work for lunch. I am about to make another batch of oopsie rolls. I'll take a couple of those and also a low carb tortilla that should make it easier to figure something out.

Okay. I looked at your pictures, Applebuddy, and I don't think I did anything wrong except try to split the rolls. Bad idea. I took a couple of rolls and some pimento cheese to work yesterday and made a delicious sandwich.
Last night I used two rolls as hamburger buns - that was great. I don't love the taste (maybe I should add some powdered garlic and maybe rosemary or Italian seasoning to the rolls), but they're not bad. They tasted a little eggish and a bit flat. Herbs, garlic and a pinch of salt should fix that for me.
I'm going to make some more today and spice 'em up. I love having something to make a sandwich or a burger with! Thanks for your help.
When I'm not on Atkins, my favorite French toast is topped with butter and cinnamon sugar. What if you mixed Truvia or Splenda or whatever you like best with some cinnamon and tried that? I don't like syrup at all, so jam or cinnamon sugar's always been my toppers for pancakes, waffles and French toast.
I've made the savory oopsies and like them, too. I am glad they are working out for you. I was skeptical when I first made them because I was thinking they would just be like meringues. NOW I know.
I am hoping to have some fried chicken for lunch today. I bought a big package of drumsticks. For breakfast I am going to just have some scrambled eggs and a couple slices of bacon at work.... that should hold me over.
I picked up two shifts for today so I pretty stoked. I picked up one for tomorrow and then one for Tuesday night. Not much but every shift helps. Last night hubby and I went to Mazatlan Restaurant and I ordered two side tacos and took the fillings and rolled them up in my tortilla. Since I don't know where I will end up tonight I will do the same thing. (Bring my own "starches")
A little tip for the oopsie, ladies . I store mine in the fridge in a loosely covered tupperware. When I'm ready to make a sandwich out of one I pop it in the toaster. It crisps up the edges and helps the texture. Also seems to help the whole thing hold together .
Thank you Val for the tip.... I set mine in the fridge we'll see how mine do.... I never thought of putting it in the fridge because mine never seem to hang around very long. I make the 6 every couple of days. I did make the Parmesan Chicken this morning and had 3 chicken legs for my breakfast instead of bacon and eggs with an oopsie. So that might make the oopsies last a little longer.
I started work at 1145 and worked all the way until 830.... with no break....:::sheesh::: am I pooped. I also only had the 3 chicken legs before I left for work, I had no lunch, not even a nibble on anything in passing. I walked in the door and heated up the chicken I was going to eat for lunch, sat down in front of 3FC and munched away.... still absolutely yummy.
Tomorrow morning for breakfast I am definitely going to try the oopsies with butter and cinnamon/splenda.... the syrup was just YUCKY!!
Lunch I will bring a few more chicken legs and get some broccoli at work.
Dinner will be at the Spaghetti Factory. I am not a big fan of spaghetti so I have never been there.... however, beggars can't be choosers since my MIL wants to take me there for my Belated Birthday dinner. So, I will have to google it and see what is Atkin's "kinda, almost, might be" friendly on their menu.

Hubby off to play ball, load of clothes in the dryer, dishes ready to be put away, dogs fed and out in the yard to play, now it is me time for the next 45 minutes.... not alot of time but I'll take it where I can get it.
I am going to make myself some eggs and bacon for breakfast and then get myself some chicken legs ready for lunch. Dinner is going to be at the Spaghetti Factory. I kind of have a gameplan for tonight's meal. I plan on having the shrimp and spinach artichoke dip which I think it was 13 carbs and then a small side of broccoli which is 10 carbs... 9 and 5 if you are subtracting fiber..... However, if I am truly hungry, I may have the vegetarian lasagna and eat half and box the other away. It is 68 carbs total or 59 if you subtract fiber.... so around 27 carbs for half. I don't think that's too bad at all. I am hoping they don't do a dessert for birthdays.
Ok, for breakfast I made three fried eggs and 3 slices of bacon. I took some drumsticks to work again.... I didn't eat them until I returned back home....and then went off to dinner at Spaghetti Factory.
I really don't like spaghetti. My MIL loves it, hence, the reason why we ate at the Spaghetti Factory. She ordered angel hair pasta and meat sauce. FIL ordered chicken fettuccini with the broccoli and mushrooms on the side.... which he promptly handed over to me when it arrived. Hubby ordered chicken parmagiana. I was a good girl... or as good as I could be at a pasta restaurant.... I ordered a small order of broccoli and the shrimp spinach and artichoke dip.... I ate all my broccoli along with all my FIL broccoli and his side of mushrooms and about a quarter of the spinach dip. I had the dip with one slice of toast that came with it. I passed the rest of the toast along and placed the rest of the dip in a take away container. I will enjoy it for a snack tomorrow with a LC tortilla.
I have tomorrow off and plan on cleaning out the rest of my cupboards. I also have to bust out the vacuum again.... with two dogs that both shed it is pretty hard to keep up with, especially with dark green carpeting. I then plan to be bored out of my mind until my hubby comes home around 5.

Is The Old Spaghetti Factory the same place? We have one of those too, if it is, but I haven't eaten there 'cause I've been afraid of the carb onslaught. It sounds as if you managed really well.
Yes, it's the same place. I think I did really well. I am a big fan of broccoli and spinach dip though. My other option was the vegetarian lasagna. I could have chosen something totally off plan, there was a lot to choose from.
Yesterday I made an omelet with bacon pieces and half of the leftover spinach dip. It was really delicious. I had that for my dinner.
Breakfast was a couple of eggs and a couple pieces of bacon. I got a phonecall from a coworker asking if I would pick up her shift last night. YAY!! So, before I left for work I made some egg salad. I just scooped up a bit on an oopsie roll and ate it like that. I was still feeling a bit hungry so I heated up the last of the chicken legs and ate that, too.
When I got home from work last night I made the omelet and was up until 330 this morning. I did sleep in until 10am though.
Breakfast this morning was 3 eggs and 2 slices of bacon.
Hubby stayed home from work yesterday. We went out for lunch.... no need to be impressed it was only McDonald's...lol... I had their double cheeseburger without the bun, but forgot to tell them no ketchup. Oh well, life goes on. Hubby needed a haircut so he took me to a salon. He surprised me with a mani/pedi while he got his haircut. He wanted to surprise me and make up for his parents taking me to the Spaghetti Factory.
It was so slow at work last night. I was really hoping it would start to get busy for the holidays.... it will come.

Santa Fe Chicken Salad (My boss bought my dinner even though I took it home to eat.) I left off the salsa, and the sour cream. It had the tortilla strips on it that I just pushed to the side.
I am normally not a cookie lover, however, the last couple of days I was really jonesing for a chocolate chip cookie. I have never baked with splenda blends.... and I know they contain sugar... but I really wanted something... I bought a package of dark chocolate chips... I used one cup... some whole wheat flour 2.25 cups.... 1 cup butter... splenda.... 1/4 cup.... and then a 1/2 cup of brown sugar/splenda... 2 eggs and 1.5 teaspoons of pure vanilla extract 1 teaspoon of baking soda and 1/2 teaspoon of salt.... If anyone has a lower carb recipe or one that uses coconut flour let me know.... I would have used coconut flour last night but I really wanted the cookies to turn out well. So NOW ... I can experiment lol They did turn out pretty good. I was surprised that I only ate 1 cookie last night.
This morning breakfast will be eggs and bacon.
Not sure what lunch will be... I am home all day today so am not really sure what will sound good.
I ended up picking up a shift on Wednesday night. I was pretty stoked about that. It was all last minute. I only worked for a few hours but, it was enough.
Yesterday was Veterans' Day. Applebee's gave away free meals to all the active and retired military all day and all night. I worked a double. I got there at 930 and got done at 9. We were packed full from 1100am until 830pm. It was an hour wait most of the day. I am kind of glad that is over. Talk about a long day.
Our general manager brought in breakfast and lunch.... almost all of it contained some form of flour or sugar.... bagels, yogurt, muffins, donuts. She did bring in a pound of sliced ham and some cream cheese. I made roll ups out of those. For lunch she brought in some pizzas and ate the toppings off of two slices. When I got done working I had a "cheeseburger"
Today I had some fried onions and then had a breast of chicken. Waiting until hubby is ready for dinner. I am making tacos.
