Back from my vacation and checking in for today. I had a great time with my daughter and her family - I miss them already. I stayed on plan fairly well while I was gone (10 days). I am up about 2.5 lbs but figure it could be water weight and am getting ready for TOM (probably tomorrow).

been away from the computer for a few days. Here's my yesterday:
breakfast - oatmeal, blueberries, almonds
lunch - egg salad sandwich (homemade, w/ leftover easter eggs) on whole wheat, a pickle, and some leftover sweet and sour cabbage soup
snack - 16 oz iced skim latte, a few pieces of leftover easter chocolate eggs (arrgh! someone brought them to a meeting and passed them around. But there were also cookies at the same meeting and I managed to avoid those)
dinner - whole wheat pasta salad w/ tahini/soy sauce, red peppers, garlic, carrot and cucumber (I love this dish, especially on a hot day), lettuce salad and two small frozen chicken nuggets.
And lots of water to go with this, and no eating after dinner. I went to the gym and lifted and stretched while watching the biggest loser...cause I always feel like a slacker if I just sit on the couch and watch that show, lol.
for today: biggest victory is that I got up and went running first thing in the morning before starting my day. I feel like a rock star. Scale was STILL at 203.5 today - where it was last week, and then it went up over the weekend, and now back down. I think I may actually start counting cals on the weekend as that is when I tend to get derailed. I manage to do well without counting during the week, but those two days of being out of my routine often throw me off...
So far today - medium banana and a few almonds before my run, had 2 whole wheat waffles (frozen) w/ almond butter and berries for breakfast, plus 1 cup skim milk. (hey I know it's a lot of food, but I had a 45 minute workout and was hungry...plus I'd rather eat more earlier in the day than later). Had a luna bar for a snack and have been drinking water at my desk all morning. So far, so good.
Paradise - I have always struggled with fruit. Honestly, I feel like it is a waste of calories. I enjoy fruit - but would rather eat something else. A lot of it is also messy to eat. I am trying really hard to force myself to eat ONE piece a day. I figured one piece is better then none. I got an apple corer for Christmas and it makes eating apples super easy. I do enjoy Strawberries - and there are in season right now, and very low in calories and easy to eat!
Blue - I don't think that is a lot of food for breakfast! I am usually very hungry in the morning too because I exercise early as well. I think eating more earlier in the day is a great idea and work hard on that too! Congrats on going for your run early! I know for me early is the best time for me to work out - I might not get the best results from it, but it is so easy to put it off otherwise.

Not a good eating day today. We taste tested fruit snacks for a quality assessment this morning, and I didn't have time to get lunch (dealing w/ exterminator)

Lunch: 6 strawberry cereal bars (I've eaten two, but I'm so hungry..) Not anymore! I'm proud to say that despite my hunger, I put the bars on the break room table after 2. A couple dollars wasted is better than me sitting here and justifying SIX bars as lunch. I'll be hungry, but I'll make dinner a bit earlier and larger.
Dinner:
Half a peanut butter and strawberry sandwich

I got good news today. After only 5 1/2 weeks with my new lifestyle I had bloodwork done and my A1C was 7.5. Last August my A1C was 12.1. For those that don't know, the A1C test is for diabetics and gives you an average of your blood sugars for the past 2-3 months. 7.0 is the target number for diabetics - my doctor was thrilled with the 7.5.

Kris Great job on the A1C. We are dealing with this with DH. Not fun! Especially since he's wanting to make changes, but he wants to eat what he likes. He's been diabetic for 20 years. He has always taken his meds, but he never really watched what he ate. Now he is taking a little more proactive approach.

We went to a Mom and Pop Chinese restaurant tonight. We know the owners, so I asked the lady what the most diet friendly meal they had on the menu. She said the stir fry. So that's what I had. I had chicken stir fry without rice. She said a lady has been coming in there and all she eats for lunch in the stir fry and she has lost 8 pounds in a month.
3 small lumpia egg rolls w/sauce 400 calories
Chicken & Vegetable Stir Fry 700 calories (I'm guessing at the calories by looking at Daily plate. I had a pile of veggies! I don't think it was 700 calories, but you never know.)
