Amethyst-I too wish I could find some gluten free ones :/ I like making spring rolls with rice paper, but yeah would love a gf egg roll wrapper....

Dot, there are lots of recipes for won to wrappers if you are so inclined as to bake.... I have a tortilla press which comes in handy for anything that has to be rolled really thin. I haven't tried any yet but I would like to. My life just doesn't include a lot of big recipes right now.

The GF wrappers look really easy to make, but I hate working with dough. There usually isn't cheese in egg rolls, but you can't have buffalo without blue cheese!

I packed spicy tomato blue cheese soup for lunch today.

Buffalo egg rolls....okay that's kind of wild. Doesn't appeal to me but to each their own. Working the dough is pretty simple, its the rolling that is the most work. Placing the dough between two sheets or parchament or in a ziplock bag (cut the sides) is the easiest if you don't have a tortilla press (which you also use the ziplock bag for.

Yep, I made a buffalo chicken version, a BBQ chicken version, and a Thai peanut chicken version.

We really just like eating appetizers instead of meals if we can.

amethyst-oh I really want a tortilla press!

munchy-love how creative you get with stuff, I definitely think of you a lot when I'm in the kitchen and trying to pull something together

1/2 potato, 2 eggs with veggie cheese, homemade gf crepe, some hot sauce and ketchup. TOM is upon me and I've been soooo hungry and tired and just general pms-ing all week. Ugh. Its felt like a struggle just to eat around 1500

Dot it sounds like you did well despite TOM. I got my tortilla press off ebay. It's very heavy because it's cast iron, but I found a seller that sold two and three for basically the same price (I wish we had flat rate boxes here in Canada). So I got two and gave one away as a gift. I have seen them at a local international grocery but that didn't exist a couple years ago.

Munchy, I would definitely make the thai peanut chicken version (with tofu or other veggie sub).

I didn't have lunch I was on the go....well I had about 4 slices of cucumber that I stole from my friend and a coffee.

Delicious lunch and I can't believe it was 244 cals (but I am weighing everything, so I know it is!)

Really yummy salad with kale, chopped veggies, sweet potato, cranberries, sunflower seeds with a poppy seed dressing. So goooood.
