Buffalo chicken soup this one made with pureed cauliflower to make it thicker. I cut the chicken down to 1lb and added in 2oz of blue cheese in the end. It made 9 HUGE servings, definitely not 6.

They're all in my freezer now.

I actually posted that just for you. I do think that they had a huge cauliflower or maybe it could have a little less broth - instead of 6 cups of broth plus a cup of water, use just the 6 cups. There is also 1 cup of Frank's, but I used 1/2 cup and plenty of cayenne.

I couldn't really serve those to everyone in my house, but I could make up a batch and freeze them for lunches. What a great idea!

Today's lunch is salad. Definitely jealous now after seeing these delicious soups.

That's what I do. My stand up freezer is stocked with single portions of everything. Some meals are things my daughter likes, other things that I like, and some that my husband likes. We can grab what we want and have a healthy and vegetable-rich meal in minutes.

Today I have Chicken cacciatore with mushrooms from the freezer It's my husband's favorite, but I tend to eat it more than he does. I'm a creature of habit and MUST pack lunch everyday. He almost never does, but sometimes eats it for dinner.

I ordered chicken souvlaki last night from a local diner, but asked for no sides (aside from the Greek salad) so they just gave me a ridiculous platter of sauteed meat and vegetables. I took some to work today for lunch, and I plan to use at least some of it scrambled with egg whites, scallions, roasted red peppers, and a laughing cow wedge for breakfast tomorrow.

Leftover Chinese takeout: plain steamed chicken and broccoli.

I added 18g of vegetarian stir fry sauce and 10g of peanut flour to make a quick low-cal peanut sauce.

Homemade Chinese Pepper Steak: Sliced steak with lots of bell pepper, onion, and mushroom, with garlic and a little soy sauce. Big helping of edamame on the side. Yum!

Leftover shepherd's pie. I make mine 50/50 turkey and mushroom, and 50/50 potato cauliflower. Plenty of corn and peas
