Didn't get a chance to grab lunch but did have some almond milk tea with boba(sweetened with splenda and dairy free) and 3/4 a single serving bag of low fat popcorn

noname-it was! we had gone out to my fav brunch place that basically does all egg dishes and they're so good. Haha I've come to realize that eggs are my favorite food.

Kale and Tofu salad with poppyseed dressing.

My best friend is Guyanese and she makes an egg curry with hard boiled eggs that is just ridiculously good. I've been making my own in single serve batches after Easter to use up our colored eggs for the past few years, basically like this but with the eggs quartered. It can be eaten with roti/naan or over rice.

Munchy-Thanks for the recipe, that looks fab!

Sandwich with light GF bread, vegan cream cheese, spinach, veggie pattie. Salad with spinach, veggie pattie, olive oil.

I must agree, eggs are amazing! That curry dish sounds awesome.

Today is homemade miso soup (loaded with bok choy and mushrooms) with half a serving of udon noodles.

Big salad with arugula, shredded carrot, avocado, two eggs, and vegan cheese. In lieu of regular dressing I made one out of braggs, 1/2 tblsp sesame oil, garlic, and pepper.
