Rosalie 04-03-2003 05:26 PM

Hi all

Well it is as Zanne said this morning the weather is yucky, icy and cold. Twice I almost fell on my butt to-day but luckily was able to maintain my balance. I got brave this morning and went for a swim. The first time in ages. I often swim in the local pool in the winter but this past winter I have been really chicken and kept putting it off. It must be old age creeping up. Well to-day I got out there and swam 20 x 25 metre laps. My eating has been good the last few days. Stayed op and have been keeping the starchy carbs to one a day.

BOB - That old lady keeps showing up in this house too.

Fillise - Congrats on the 11.5 pounds gone. Glad to see your Lenten fast is working for you.

Zanne - WTG on getting rid of your cravings for the illegal stuff. I saw that Brown Rice Syrup in the store the other day and was wondering about it too. I just did a search on Google and found the following article. It looks like it may be quite low gi as it contains so little glucose and the maltose and other carbs take quite a while to be digested. DEB what do you think?

Quote:

Science Park Aarhus, Denmark
Brown rice syrup is an extremely versatile and relatively healthy sweetener which is derived by culturing rice with enzymes to break down the starches, then straining off the liquid and cooking it until the desired consistency is reached. The final product is roughly 50% soluble complex carbohydrates, 45% maltose, and 3% glucose. The glucose is absorbed into the bloodstream immediately, the maltose takes up to one and a half hours to be digested, and the complex carbohydrates take from two to three hours, providing a steady supply of energy. Rice syrup has a shelf life of about a year, and once opened, should be stored in a cool, dry place.
Agape - That's interesting that you say that calcium reduces your cravings for sweet things. I have been taking my calcium tabs regularly lately and I have been craving and snacking much less than previously. I used to have a bottle in the cupboard but most of the time I would forget or couldn't be bothered to take them. It's good to hear another good reason for taking them. Hope you can find something that works for your gs to control his hyperactivity. Much better to do it without medications if possible.

Monet Congrats on getting your certification. Hope you are successful in finding a job. Sounds like you had a very pleasant evening yesterday.

Jack-K - Hope your pizza party went well.

Deb - Congrats for staying op. With this and all the exercise you are doing I am sure you will see results on that metal monster when you finally decide to weigh again. How long are you planning on staying off the scale? I don't know too much about the line dancing but I wouldn't think it would be much different from the country and western line dancing, probably just the type of music. :grouphug:

Grin - So us easterners are not the only ones with cool weather. But at least you had some sunshine to-day. For us to-day it's been icy rain.

Ldblond - Sorry you have a houseful of sick kids to care for. Hope they are all better soon.

Tranquil - Don't worry about that slip yesterday. Just hop right back on that wagon. Glad to hear you are maintaining your new low.

Yellowrose - Good to see you checking in and to hear that you are slowly recovering. I think it is great that you have dh to accompany you on your walks. Take care.

Agape - My dil uses spelt. The one thing I know she uses it for is pizza crust. I was there for dinner one evening when she had made pizza using spelt and it was delicious. I'm not sure what else she uses it for, probably pancakes.

Well I've gotta go and check my dinner. I have a beef stew in the oven. I was planning on doing a crockpot stew but was a bit late getting started so decided to put it in a slow oven instead.

Bye for now.

Marie.

chacha5 04-03-2003 06:07 PM

The Quilter 04-03-2003 06:26 PM

Thursday Night

Hello, you all!!!

So . . . how's it going? I hope everybody has had a wonderful Friday-eve day. Thanks for all the well wishes in hopes that my illin' tummy starts feeling better. I felt much better today. I do think it's allergies. Everything that's bloomable is doing its thing. My gosh, our world got green overnight. Plus the grass grew about a foot since yesterday. Where is COUNTRY and that trusty mower of hers????

MONET---So glad to hear that you were down on the scales yesterday. I'm seeing a breakthrough for you coming. Those pounds are going to slide right off your little behind. Just watch and see. I may try some claritan. I haven't felt really, really bad. Just a twinge of ear aches and this tiny headache that won't get to the curb. Stuff like that.

JACKK---I think there should be an unwritten sanity-rule that states as follows: if you go away for the weekend, you absolutely do NOT weigh in the next Wednesday. Doesn't that sound like a good idea? Okay, thanks for the warning . . . I've got 4.5 years to get off this weight before my elastic goes to pot. I didn't know that, so that's an extra incentive for me to keep up with it. Would you mind giving me those popcorn instrux again? I finally got around to buying the plain popcorn and the lunch sacks. And of course, I can't remember what you said. Just call me Duh!

TRISH----Congrats on being down 2.5. That's GREAT!!! You are so smart to stay positive. Hey, what's done is done, right? We can only control the now and the future. So no more crying over spilt milk or cookies eaten or whatever happened. I'm so happy that you and LIN were going to get together. You all have fun, and please TAKE A PICTURE!!!!!

JECRITES----Wow, girl!!!! You are doing great!!! I'm so thrilled for you. Isn't it great when you find something that works for you? I just love that! Keep up the good work. We are all doing the happy dance for you! I know what you mean about wanting your family to start eating healthy. My DB & SIL are heavy. SIL just had a "weird" EKG and had to go for a stress test and all that stuff. Well, I think she's really got that it's up to her to help her health. She's been watching her food intake and has been exercising all the time for over 2 weeks. I keep sending her lots of the motivation from this board to help her stay on track. Good luck to you with your family.

COUNTRY----What a skinny minny you must be!!! 151!!!!! Oh man, can you see the green glow coming from the skies of southwestern OH???? I'm so jealous. Not really. Just keep telling me how great it is to be on the verge of the 140's. That will keep me going strong on my diet. You really need to give yourself a HUGE pat on the back. Fantastic effort, my friend!!!

ZANNE----Just put that scale out in the cold when it's mean to you on Wednesdays. Hey, I am so glad to hear you say that you are focusing on the positive things. Like the fact that you FEEL BETTER and your JEANS ARE FITTING BETTER. That's great. Just keep your mind on those victories. When your body is ready to release a few more pounds it will do so. I really feel that our bodies bounce around on the scale before they settle into a new weight. Keep up the good work. You'll get there!!! I think that's adorable that little DS was exercising with you. What a cutie!!!

ROSALIE---I knew you'd weigh low this week. So glad to see you got over "the hump." It feels good to be in the 190's doesn't it? WTG for hanging in there and getting back on track! And a brand new all time low . . . AWESOME!!! That hamburger meat salad sounded wonderful. I can't wait to try that. I love cooked foods on top of salad. My MIL does that all the time.

Okay, I know I missed a bunch of posts. But Paul is on his way home and we are off to Sam's Club. I buy my mixed greens and baby spinach for my salads there. I've been out for 3 days and am going crazy without my daily salads. Perhaps that's why my belly has been griping. Going cold turkey is difficult! LOL.

Have a good night!
Kim

Melf 04-03-2003 06:31 PM

Hey Everyone! Thought I'd better try to pop in & check the board & try to post a little. I'm so far behind that there is no way to start at the beginning of the week, but here goes.

I know it's a day late, but HAPPY BIRTHDAY TV :hb: :hat: :gift:

Debelli, Monet, Jack-k, Trish, Rosalie & Zanne Thank you all for the welcome back & words of encouragment. I truely missed all of you too & it's good to be back in the swing of things.

I see lots of new names on the board! WOW! Hoping to get to know all of you soon. Welcome & best of luck with your goals on this WOE.

Linworthlady, great picture! Beautiful smile!

YellowRose, Great to have had the chance to talk with you the other night too. You're so sweet to be concerned about me. I do appreciate your friendship. Hope you & Trish have a GREAT visit & LOL a few for me too. :)

WIW was a let down for me, as I was down to 138, but right back up to 140 due to bread! It seems as though every time I eat bread it pushes me back up on the scale. Hope most of you faired better than I did.

We started this class at church every Thursday night called Fit4 & it deals with heart, soul, mind, & strenght. Encourages good nutriention, exercise, Bible Study, & it's a small group, so we can support & encourage each other too. We have to journal our food, water, exercise & thoughts each day, so I'm hoping it will help me get back on track with my eating. Of course, I'm doing the SB WOE instead of the recommended pryimid type plan. Others in the group that are also diabetics are always interested about my food ideas. :D Just thought I'd share that with all of you.

I went to the doctor yesterday about the shoulder/neck pain that has been bugging me more & more since my fall in Feb. The doc thinks I have a nerve impingement & is recommending pysical therapy & return to see him in 6 weeks. Can see the therapist till Monday. Started on the Vioxx today with very little relief yet, but I'm hopefull!

I know this is short, but wanted to say hello. Got to go. Class is at 6:30 & dh will be home soon, so got to get some supper ready.

174/140/135

Debelli 04-03-2003 07:11 PM

Hey All:wave:

LOL! I have to tell you what my Mom said. First, she's having trouble printing labels from her computer, so she I/M'ed me that she wants me to come over. She then said: "Well, maybe two heads are better than one. I'll take that back. Men have two heads and they're still dumb." I LOVE IT!!!! An gosh, it's so true!!!!!!!!!!!!

Picked up LAUREN from school and had two of her friends come home with her. They're in the family room watching movies. MICHAEL left with his friend ALEX for the day, haven't heard from him and he knows better than that. ELI left a message, forgot he had a meeting at 6:30pm-he won't be home til after 9pm. Have to figure out what to do for dinner, sure as heck not cooking for these kids, and they had pizza for lunch, so  As for me, still haven't decided what to eat, just had a salad-as close to veggies as I'm going to come. My salad was lettuce, dressing and gorgonzola cheese - adventurous aren't I;)

Okay, for all of you who don't know, JOHN EDWARD is a psychic on TV. I personally believe in a life after death (has nothing to do with religion guys, I'm the most unreligious person you'll meet) and I swore if he ever came anywhere near me that I'd get tickets. I'm sorta disappointed it's only an hour and a half event but this is something I've wanted to do for so long there was no way I was going to pass it up. Bought 2 tickets not knowing who will go with me. Possibly ELI since his birthday is Sunday, the day after-would be nice to get a way for the weekend, but don't know anything more than I'm going!!!

GRIN, down here last month we experienced SUMMER! We had 3 nice days in a row but now it's turning HOT again. There is no Spring here this year, we just jumped right into summer and along with it comes the mosquitos! Did you see my post a while back about fruits and portions? I don't remember if you were on the board at that time or not, but if not, let me know and I"ll report the info. I can tell you, once you get back in to the exercise routine, you'll see how good it makes you feel and you'll look forward to doing it:)

LDBLOND, take care that you don't pick up one or all 3 of those illnesses!!!!!

MONET, he didn't even ask me to take him anywhere today-he went and took the bus. Now I wonder how he's going to get home! I'm waiting some sort of phone call. MICHAEL has NO sense of direction, there's no way he can make it around the block without getting lost-:nono: no car for him!

CHRIS, hope you feel better. Hey if they're greener bananas and ww saltines, then you're still okay;)

ZANNE, I too have wondered about the brown rice syrup. Here's a little more to add to what ROSALIE posted that she found:

The brown rice syrup has a moderate glycemic index. It is much more quickly absorbed than fructose, which must percolate in the liver before it can be converted into absorbable glucose. But the maltoses are slower than glucose. Table sugar breaks down into glucose and fructose—it has a quick initial effect on blood sugar followed by a long, slow release. Maltose is slower to begin with, but gets into the blood more completely within a relative short time.

This is from RYSSA'S site and in a description she put about soy milk she had in it
I have seen in several brands, brown rice syrup is NOT any better than molasses or cane sugar, but it can be classified as a carbohydrate and not a sugar according to federal label laws.

That's about all I could find. I guess you could try it and see how it effects you. I don't know what the consistency of this is, thick like honey or less so like maple or agave. I guess you could try it and give us a review of what you think, what you did with it and if you see any effects from it. I think, just as with anything else, moderation is the key.

TRANQUIL, what made you fall off the wagon? Well, as long as you are back OP today I'm sure there won't be any downfalls from your little indiscretion.

JEC, I'm sure you'll be happy that you got that book. I've highlighted so many pages in mine. Let me know what you think!

ROSE, glad to see your post. Happy to know you and TRISH are going to meet up AND that DD is going as well to meet TRISH! I'm sure wherever you go, and whatever you do, you'll have a good time together. Glad to hear thebones are slowly but surely getting better - how nice that RAY is walking with you now - I wish ELI would with me, we use to and I loved it, we talked and talked, but now, it's just enough if he comes home at a decent hour!

AGAPE, MAIZE is corn and corn is a no-no, no matter what form it's in. Now spelt, that's fine to use, you can combine/replace it with ww flour. Here's a site that has some info on spelt along with this article

SPELT - What is it?

Spelt is an amazing grain that is being "rediscovered" by American consumers

Popular in Europe for centuries, Spelt is used in a wide variety of cereals, pastas, crackers, baked goods, and beers. The ancient Romans knew it as "farrum", Italians now call it "farro"; today's Germans know it as "dinkle." Spelt has been used successfully, under physicians' supervision, as a wheat substitute for people who have wheat allergies.
Once commonly grown in North America, Spelt was replaced at the beginning of this century by modern wheat varieties which are more suited to the high volume production techniques currently used on most American farms. Spelt's flavorful, "nutty" taste has proven to be an attractive alternative to the common varieties of wheat, so much so that spelt production in North America has increased nearly 80-fold in less than a decade.
Reintroduced to the North American market by Purity Foods in 1987, VITA-SPELT® products are gaining popularity among manufacturers, bakers and consumers across North America. VITA-SPELT® products are nutritious, versatile, and very tasty; they enjoy a strong following throughout the U.S. and Canada. Whether or not you have wheat allergies, your first taste of our spelt-based foods will bring you back for more!Spelt vs. WheatWhile many people have compared Spelt to commercial strains of wheat, it is markedly different. All grains of this family are derived from grasses, some, such as Spelt, are closer to the earliest cultivated crops in the western world. Spelt's origins can be traced back to approximately 5,000 BC in the area now known as Iran.
Spelt (Triticum spelta) is a distant cousin to modern wheat (Triticum aestivum). Perhaps a better description would be that spelt is a great uncle of modern wheat. Modern wheat varieties have been bred to be easier to grow and harvest, to increase yield, as well as to have a high gluten content for the production of high-volume commercial baked goods.
Spelt, on the other hand, has retained much of its original character. It retains a sturdy husk or hull which remains with the kernel, as opposed to modern wheat varieties which have been bred to lose their husks when harvested (free threshing). This hull protects the Spelt grain from pollutants and insects. Furthermore, unlike other grains, spelt is not normally treated with pesticides or other chemicals. Spelt is stored and shipped with its protective hull intact; it is separated just before being milled into flour. Leaving the husk on the grain not only protects the kernel, but enhances the retention of the nutrients in the kernel and improves freshness.Nutrition ValueSpelt's uniqueness is also derived from its genetic makeup and nutrition profile. Spelt has high water solubility, so the nutrients are easily absorbed by the body. Spelt contains special carbohydrates (Mucopolysaccharides) which are an important factor in blood clotting and stimulating the body's immune system. It is also a superb fiber resource and has large amounts of B complex vitamins. Total protein content is from 10 to 25% greater than the common varieties of commercial wheat.
Athletes who want to carbohydrate-load before competition will find that Spelt delivers a high level of "complex carbs" for their nutritional needs. Endurance athletes are finding the benefits of additional energy and vitality with the addition of VITA-SPELT® products to their diet. For more disscussion of the history and modern development of Spelt, read this excerpt from Alternative Wheat Cereals as Food GrainsOne of the most beneficial differences between spelt and wheat is the fact that many wheat and gluten-sensitive individuals have been able to include Spelt based foods in their diets. Spelt can be substituted for whole wheat in breads, cookies, crackers, and cakes as well as muffins, pancakes and waffles. Spelt flour is used in the production of our VITA-SPELT® line of pastas.

Hope this helps!

JACKK, what I'd REALLY like to do when they get on my nerve is not take a walk, but more like a plane outta here! I agree, we do way too much for our kids, but I'm sure at your DD's age, she at least appreciates what you do for her!!!

BOB, would I kid you? See, I told you. I e-mailed SOL and VES and told them I was coming and want to at least see them. May just stay at the RIU. My sister stayed there for 3 days this week, they said Johnny was no longer there - bummer. BUT, they gave her the same rate!!!

ROSALIE, I'm not sure what I'll do with the scale. Ultimately, I know I'll weigh in on June 10th no matter what-the date I reached goal. BUT, I'll probably do so earlier. I have to at least know if what I'm doing is at least working. If not, I'm in trouble and perplexed as well. I've been so good, not a drop of sugar in this body!!!

CHACHA, you need to e-mail me @ [email protected] and include your current and goal weight and I can tell you. SB recommends approx 40% of your intake come from carbs.

QUILTER, glad to hear your tum-tum is feeling better. Allergies effect your stomach?

MELF, glad to see another post - back on track!:D Hope your should doesn't get worse, take good care of yourself or you won't be able to take care of others. Sounds like an interesting class you're doing at church - enjoy yourself there!

Okay, I'm outta here for now. I'm going to go find something to make for dinner. Luckily, LAUREN and her friends walked over to BK for dinner. I NEVER buy that crap for my kids, not that MICHAEL would ever eat from there anyway, though, hmmm, I do think they have a veggie burger, but either way, I don't go there, so this really is a (crappy) treat for LAUREN.

Will check in later!!

Toodles

Thursday

Hello All,

Me back and bloated. THe steak'n blue cheese revenge. Ladies, do not give in! You suffer longer than it takes you to eat it.

DEB - Kids. That's what you get for being there for them full time. Well here now. Though I am sure you already know all the reasons why mother's love is "unconditional". On the brighter side, they sure make you proud when their projects are complete, don't they?

I need to start practicing the: Each day in every way I am getting thinner and thinner mantra. It's all about attitude, right? And not having the munchies....

Thanks to all of you who answered my plea about the Jerky info. But truly, I am waiting for the materializers or whatever they call those star trek thinks that generate food out of no where and deliver it to your lap. Let's see.... some salmon with freshly steamed vegetables in juicy wine and mushroom sauce... add to that a mash potato look alike (actually made out of a 100% nutritionally balanced substitute that actually increases your metabolic rate)... and I'd be a happy camper.

See you all next time!

V

THE BIG ORANGE BABE 04-03-2003 08:14 PM

DEBBIE....get us a new contact!!! What would we do if we don't have one????? Ask that girl at the front desk that has been there since we started staying there...you know the dark haired
one that's always so nice to us...

BOB

Debelli 04-03-2003 08:26 PM

QUICKIE as I check my e-mail (which I'm still having trouble with)

BOB, they gave LESLIE the room for $45 anyhow. I'll just give them my schpeel next time I need a room.

VES, I like that mantra of yours, I think I'll use it on Monday when I go for yoga during meditation! I tried the other flavor that I got of the protein drink just so I could tell you what I thought about it, it's caramel, it's okay, but I like the cappuccino lots better!

Okie dokie! That's all folks!

Just found this great article at:
http://www.mbrservices.com/commtools...chive/Food.htm

Three keys to great baking with soyflour

Professional bakers know the benefits of using soy flour. It helps crusts darken nicely, it makes for a whiter bread crumb, and it extends the shelf life of baked goods. Home bakers are also being drawn to this healthful flour because it boosts the protein content of their bread, cakes and pancakes, as well as supplying iron, calcium and B vitamins.

There are a few crucial keys to baking with soy flour though. "You can't just substitute half the wheat flour in your favorite bread recipe with soy flour and expect it will turn out the same," cautions Pam Schubbe, vice president, soy flour, for Harvest States oil seed processing and refining. "There are limits to how much soy flour you can use in a recipe and still get the flavor and texture you want."

She offers these three important tips for substituting soy flour into your favorite baking recipes:
Know the fat content of your soyflour. There are three basic fat levels of soy flour marketed :
· full-fat soy flour - contains about 22% fat and 40% protein
· low-fat soy flour - contains about 7% fat and 52% protein
· defatted soy flour - contains around 1% fat and 55% protein

The type you use will influence the alternations you need to make to the liquid needed in the recipe (see third point). Other than that, the only major difference between the three types of soy flour is that the full-fat version will often produce a more yellow product, because of the added fat, adds Schubbe.

Use soyflour in the right amount. The general rule for most breads and yeast-risen dough recipes is to substitute only up to 15% of your wheat flour with soy flour, measured by weight. (15% is about two tablespoons per cup.) Because soy flour contains no gluten, substituting it at too high an amount for wheat flour will prevent the dough from rising properly. "Generally I recommend replacing only about 6% of wheat flour with soy flour in yeast doughs to ensure a nice, light baked good," says Schubbe.
In quick breads, pancakes and doughnut recipes, you can replace up to 1/4 of the total flour with soy flour. You will also start to get that raw soybean flavor when you use too much, notes Schubbe.

Adjust the recipe's liquid. The other standard rule to remember when using defatted soy flour in your dough or batter is to increase the liquid by 1.5 times the usual amount. For instance, if your bread recipe calls for 1 cup water, use 1 1/2 cups water if you are substituting defatted soy flour for 15% of the wheat flour. Add about 25% more water to the recipe if you are using low-fat soy flour.

Because it adds moisture to baked products, soy flour can also be used as an inexpensive and cholesterol-free egg substitute. Replace one egg with 1 tablespoon soy flour and 1 tablespoon water.

Teensybean 04-04-2003 12:47 AM

Thursday Night--

Just a quick update. They postponed Ted's surgery yesterday because of a gout flair up and he was running a tempature. So will not be able to get in now until the 16th of April. I am going to be a nervous wreck before this is all done. Spent all day in town yesterday trying to get him in to see his Arthritis Dr. Finally got in at 4:45. They gave him a shot in the wrist, and now we wait until the 16th.

Forgive me for not taking the time to reply.... will try and get caught up tomorrow. Been trying to get stuff done around here. Which never seems to end. Good news is that so far I have completed 4 full days of exercise. Three days on the TBT and walked for 45 minutes yesterday while waiting at SIL for Dr to return Ted's call. Will have to get that posted too.

Sweet Dreams to you all.......
