BEEF JERKY

For those of you wondering about beef jerky....(chomp chomp! I just finished some!)

Here is my recipe: its easy, peasy..

1 pound beef flank steak (or other long grain beef)

Cut the beef WITH the grain into 1/4 inch thick pieces about 2 inches by 5 or 6 inches.

Mix in: 1 Tablespoon fajita seasoning ( or 1 T salt and 1 teas. ground pepper, and 1/2 teas. garlic powder)

Layer the pieces on a rack over a pan in a single layer. Its ok if they touch a bit. Bake at 175 to 200 degrees for 8 hours. Drain on paper towels, then store in airtight container.

I get my flank steak at Costco. I make about three or four pounds at a time, and keep it in the fridge for quick snacks. When you make it yourself, it has no sugar at all in it, and just enough salt to preserve it. It is easy to carry for emergency meals too!

VESNOID: I make a protein shake for my husband to carry to work every day. I use milk and chocolate Designer Whey protein, with a couple of strawberries in it. Its pretty good! Good to see you back! How are the clay works going?

BOB: YEAH! Come on! We will have a ball! When we get it all decided, I am going to tell Tom he has to go camping for the weekend! Haha! And I don't care who you bring along...the more the merrier!

I had a wonderful day! My books came from Amazon, my target got here and I got to shoot some arrows with my older daughter, I got a letter from the professional standards commission, and they have given me special certification, so I can get a job, and work on the needed courses for a clear certification while I am working! Now I need to find a job! I feel great after another good nights sleep, and I read in one of my new books, The Metabolic Type Diet, that I am a protein type, and guess what the diet looks like? SugarBusters! The weather is gorgeous, and tonight, I am going to a Scrabble party! Now, if I can beat everyone tonight, then the day will have been just about perfect!

This realization just hit me upside my head...

I'm sitting at the computer checking mail and I said to myself: "I want something to eat". I start rummaging around the cupboards and in the fridge and nothing tickles my fancy. So I just grabbed some milk and that was that.

I realized I've been doing this for the past couple of days. I feel like I want to eat something, but don't know just what. So I'll get some water or a fruit and that's it.

I realized that I AM NOT WANTING ILLEGAL STUFF!!!!!! I go searching for that "something" and have cookies and candies staring me in the face, but I just turn up my nose!

I know somebody, or maybe more than one somebody, told me to stay legal and the cravings for the bad stuff would stop. YOU WERE RIGHT!!!

I just wanted to share my revelation!

heartmom 04-02-2003 09:19 PM

I'm here, I'm here! Let's get WIW outta the way- I'm at 199 this morning. I was down to 198 last week, so not too good. But if you guys knew what all I consumed Sunday, you would freak. I've never eaten that much before- not even during the holidays where all I did was pig out. Well, I got right back on track Monday. I've exercised 2 out of the past 3 days- eating has been good also. I need to make a mini goal for myself- hmmm.?? I know- I want to loose 10 pounds by this time next month and stick with my exercising! Okay, sounds good. Well, my kids are fighting so I gotta go before they kill each other.

well well well

Hi Everybody,
Today has been slow. I didn't eat right, meaning I didn't get enough food in and we all know that's like over eating. I just got thrown off today and I don't like it. Kinda feel like Debbie, just calling it a day, by going to bed. Anyhow, this is a support board no matter how our day is going, where can come and just let off a little steam. Oh, by the way, I took my daughter w/ gs to have him seen by a really good doctor who also believe in the natural approach for healing or what ever ails you. My little gs is hyper and loves to tare up things. None of that numbing the brain stuff, so she is trying to find ways to divert some of his energy.

Jecrites ~~ I have to say super duper CONGRADS on your weight loss. I do know how you are feeling. Keep up the good work.

Country~~ Thank you for your concern. I still have a couple of weeks before I see the "big cahooner" (doctor). I love my doctor, too, he is the very best I could ever hope for in a doctor. Though I shouldn't be surprised since I prayed for a good one. :-)

Jack-K ~~ Thank you, too, for your concern. I try to keep in my heart to expect the best and don't settle for less. How about that!!

BigOrangeBabe ~~ LOL that old lady was something else. The story was very funny and she ain't welcome at me house. She is a little too much for me, WOW! WHEW! I haven't forgotten OXYCLEAN, I will try it and follow the directions to the letter. Thanx

Zanne ~~ WTG on that sugar devil. Have you heard that calcium is a great for reducing the craving for sugar? I take calcium and the sugar cravings are at a minimum. I tend to crave sweets when I am cycling, but at's about it.

Well I gotta go. Will be back tomorrow.

Love Yall,
LJunel (slim and healthy)

Back from my meeting. I had chili...it was legal I am sure. The bread, which was supposed to be whole wheat was not. After several small pieces, I saw the wrapper and read it. WW was after salt, dang it! The couple who hosted tonight live on a lake, so we went down to their dock after dinner, made a huge fire in the fire pit, and they roasted marshmallows. I didn't. We sang nice folksy campfire worship songs, and had a blast. Can't believe we stayed out so late!

We never got around to playing Scrabble. Probably a good thing, since I would have been ticked if I had lost!

So, I guess the day was pretty near perfect.

ZANNE: That is great that you are over the cravings, and looking for legal stuff when you are hungry! That is a great hurdle behind you!

Zanne 04-03-2003 07:38 AM

Good Thursday Morning

Morning All!

It's yucky here again. :( Back to around or below freezing. DH nearly fell down our front steps on his way to work this morning. Things just look wet, but are actually covered by a thin sheet of ice.

My new evening habit has sure kicked in. I might finish this sweater by the end of next week! And I'm not really hungry at night. My snacking was just a bad habit. DH says he doesn't even really miss his chips any more either (he's been snacking on yogurt or apples). I haven't had chips in the house for almost 3 weeks.

So for those of you who get discouraged cause you've fallen down, just keep getting back up and keep trying your best. I don't know how many times I've fallen down, but this time I think someone crazy glued my butt in that wagon!

AGAPE--You know something? I've been taking calcium for about a month now! I usually only really want sweets once a month;) , it's the salty snacks (chips, cheesies) that are my downfall. Years ago DH and I saw something on TV about a teacher who would make his hyper students run laps on the school track. Sometimes when DS is full of beans, we send him outside to run up and down the yard. We make it a game to see how many times he can do it. I also got him a mini trampoline this winter that we would tell him to jump on so he wouldn't be bouncing off the walls .

MONET--Your evening sounds wonderful. I hope you med adjustment is making you feel better. Congrats on getting your certification. Hooray for you losing 2!

DEBELLI--You're gonna have to make those kids get their licenses so you have a little time for yourself! Hope today is better for you:grouphug:

HEARTMOM--HOORAY for you being below 200!!!! You really have to try to not let the scale set your mood. I was up yesterday too, but my clothes are fitting better and I feel better. I think a mini goal is good. Sometimes the big, overall picture is just too overwhelming. Keep up the good work.

IDBLOND--You're doing great with staying OP. Stay focused on that. I was up yesterday too, even tho I've been doing pretty good with eating and exercising. I sometimes think that nasty scale likes playing mind games with us.

ROSALIE--WTG on your new low!!!! You sure are gonna be getting in your exercise. Your dinner sounded yummy.

FILLISE--11.5 in 4 weeks is wonderful! WOW! Just about 3 pounds a week. You're doing great.

COUNTRY--Excellent job getting to your new low. All that hard work on that treadmill is paying off.

MELF--sorry you've been having some problems. Glad you came back and that you're feeling better.

LINWORTH--WHOOHOO! Look at those sexy legs! You are very lovely!

QUILTER--staying the same is better than a gain. Hope you feel better soon. Allergies can be rotten.

CHACHA--WTG with staying on plan and exercising! Keep on with what you're doing and you'll see results for sure.

JACKK--sorry the scale showed you up yesterday. Those 2 lbs will be gone in no time. I was up yesterday too, but today the stupid metal monster has me down 3 lbs from yesterday even tho today I feel fatter. Go figure:dizzy:

TRISHALOO--Congrats on being 2.5 closer to your low. You're too funny with altering the recipe. I don't follow recipes too closely either. I just look at the recipe to get an idea of what to put in.

JECRITES--Glad you're feeling better today. That's excellent, being down 23lbs in a couple of months. Keep on going down, girl!

JANE--keep hanging in there. This WOE will work. Give it time.

VESNOID--nice to see you post! I agree, sugar is evil. Try to stop buying the tempting, evil foods and stock up on healthy, legal foods. Sorry, I don't know anything about beef jerky or protein drinks.

Ok, I think I've pretty much caught up. A BIG HELLO to all I missed.

Talk @ you all later!

jane8760 04-03-2003 08:38 AM

Good morning everyone

Good morning! I hope everyone is well this morning.

I was bad last night. My meal was fine it was the wine that did me in. Does anyone have wine at night on the plan? I know I am going to have to limit it to one glass if that and only have it on the weekends but it is so hard. I really enjoy having wine when I get home from work. Everyone says you have to make some kind of sacrifice and since this WOE really isn't a sacrifice I will have to give up the wine.

A question. How many snacks can you have in a day? I usually have at least 2-3. Is this allowed as long as they are protein based or veggies/fruit? Is there a limit to how many calories or whatever that you are supposed to consume in a day? I just started the book..........

I went to Curves again last night. I will go tonight to get in my 3 nights. They are opening one up around the corner from my home so that will be great....now I can go on a Saturday a.m. and not tie up my weeknights. I can't wait. I haven't seen any difference in my body since I started but it hasn't been a month yet. It had better make a difference because I HATE exercise! I like to walk and we have a great neighborhood. Our condo area has a 2 mile stretch that is great to walk around.

Well enough with all that. I will check in again later.

Jane

Solly 04-03-2003 09:01 AM

Good Morning Ladies,

Have you noticed, we just can't to keep any men around here. :s:

Got my 3 mile walk in last night. It was such a nice night, a little windy but nice. Had to run to Target to look for a grill, our died the other night and some other errands so it was too late to workout. Will catch-up over the weekend.

Our piza party is today so I won't be back until after lunch. I brought my chicken salad to eat when I get back.

Bob, Cute story, but just a little to close to home.

Idblond, Sometimes we patronize ourselves and say everything we have eaten is legal. We just don't realize that we can overdo the legal things. I to have been cutting out starchy carbs for a few days. I try to only have 1 a day on the most part.

Monet, it is so good to hear the positveness back in your posts. I am so glad you are feeling and sleeping better. Glad you had a nice time even though you didn't get to beat their pants off at scrabble.

Zanne, good for you. Old habits can be broken and replaced with new healthy ones. Glad you are moving in the right direction. I hope that was super glue they used. If you just don't buy that stuff, everyone is better off.

Jane, wine is ok if it is red. I don't like red, too dry. I do drink white ziffendale when I drink it. I totally gave it up during the week. And save it for the weekends.

Heartmom, Sunday is past and now you are back on track. Just keep focused on your mini goal and you will do it.

Deb, here a :grouphug: just for you.

Agape, I hope they can find something that works for your gs. Today is a new day and a new beginnig.

Anyone heard from Mel or Gracious?

Have a great day.

Jackie

JACK: I tried emailing Gracious a few weeks ago. Not sure if the email I have (its like a yahoo or hotmail) is one she is still checking. She has not posted on the Low Carb board lately either. I wish I knew her ebay account name! I would try and catch her over there. :s:

Here it is 9:30, and I have done precious little! I think I will climb back in bed. I only got about 6 hours of sleep last night, and even that was not as good as the previous two nights, because nature kept calling! I soothed myself by remembering it was probably a sign of a weight drop. (Then, I forgot to get on the metal monster before I ate breakfast! Am I dumb or what? ) I feel much better with 8 to 9 hours, due to my Lupus, so perhaps a little nap is in order! I know I have a ton of things to do, but I am procrastinating BIG time!

Later!

I have been wondering about GRACIOUS too. I see in our news that all the wee eat coast provinces have had terrible flooding. I've been hoping that GRACIOUS and her family are ok.

So GRACIOUS, if you're lurking, please check in here or email someone so they can let us know how you're doing.

Just read your post. My sister-in-law has Lupus. I'm sorry to hear you do too. She has struggled so long with it. I hope you are fairing better than her.

Get more sleep!

Trishaloo 04-03-2003 10:10 AM

Good morning everyone.

We have to go to a family night function with Jordan's recruiters tonight. They're supposed to have a drill sergeant there and people available to ask questions. Should be interesting, but that means dinner will be late. Baseball season starts for our team today but I don't think we're going tonight since we have the other thing. We have a minor league team here, the double A affiliate for the Astros, the Round Rock Express. We have season tickets and it is so much fun. I'm not even all that crazy about baseball, but it give you something else to do on a Friday night. The only problem for me is that I'm not much of a beer drinker, but there's something about having a hot dog and a beer at a baseball game.

Monet - I knew if anyone would have a recipe for jerky, it would be you or Crystle. That sounds yummy and easy. I think I'm going to try that this week-end.

Agape - My niece has a daughter that I wouldn't really call hyper, but sometimes just has uncontrollable outbursts. They finally took her off all wheat, simple sugars, artificial sweeteners and a couple of other things, and she is so much better. She's lilke a different kid. It's nice to know that there are doctors out there that are willing to look at a holistic approach without just trying to dope up the kid because it's easier. They also see an oriental medicine doctor that has helped her also.

Jane - Wine is my downfall too. I was a white wine drinker before I started this WOE, but now I only drink red and I only like the really dry wine anyway. I'm sure that I would be losing faster if I wasn't drinking it at all, but I don't think it's adversely affected me that much.

Guess I better get to work. We're taking one of my co-workers out to lunch today and hoping that she picks someplace where I can eat half-way decent.

See ya later.

Trish

Fillise 04-03-2003 10:23 AM

Good Thursday Morning

Morning all!

Another glorious spring day here in East Central Alabama! I'm loving this!

Yesterday completed the fourth week of my Lenten fast. It has been a great experience, I'm feeling like I'm finally back on track. I'm not counting down to Easter, I'm counting up so that each week is an added victory!

I saw the Oprah show on weight loss yesterday (a repeat of the one she did the first of January). It was interesting, I especially liked the part about getting your head together before trying to change one's eating habits. For so many of us it's not the food, but our emotions that drive us to overeat. Changing the food without working on the emotional roots probably won't get us very far. I don't think it is coincidence that I began this WOE at about the same thime as I quit my job and began my own consulting practice. I was ready to make some changes in my life and to look at what was working and what wasn't. And that led me here! I am so thankful.

Marie--WTG on the loss--especially the WIW loss!

Jackie--thanks for the vote of confidence! I'm trying to emulate you--I'm still in awe of that 100 lbs GONE!

BOB--That sounds like the same old lady I've been noticing around my house!

LD-Remember that scale will bouce around daily! Maybe you can stay off it for a few days. I hate that bouncy thing. Remember as long as you are doing what you are supposed to the scale will eventually follow.

Monet--What is your special certification in? It sounds like you are having a fantastic week--I'd sure hate to be across the Scrable table fromyou this week, I don't think you can lose! That jerky recipe sounds good, I think I'll make some!

Susanne--Isn't it amazing when we get hungry for the good stuff! You go girl!

Heart--Hey you seem to be firmly into the 100s! That's great progress. As long as you get right back on track you will be fine!

Agape--Sorry you've had one of THOSE days! Sometimes it is bed just to crawl into bed and start over again. I tried the Oxyclean on BOB's recommendation--my undies are so white I need sunglasses!

Jane--Dry red wine is acceptable in this WOE and I occassionaly have a glass with no ill effects. Others may have a different experience, but I don't think one glass every now and then will hurt you.

Deb--Looking forward to hearing from you when you get a chance to say hello!

I have to go to the dentist today. Even if it is just for a cleaning I HATE going to the dentist!

Have a good OP days everyone!

Susan

Fillise - I keep forgetting to mention. I read a speech that your Alabama State Auditor, Beth Chapman, gave not too long ago. All I can say is, "Wow". I'm sure you've heard it, but it was awesome.
