I'm home waiting on the rest of the rain...not cooking tonight. I'm having a few slices of pork tenderloin dipped in homemade honey mustard dressing, some pork rinds and ham salad, and sugar-free jello with whipped cream.

I'm still doing the "There's nothing I really want" thing. Very annoying.

Shirataki Noodles with panchetta, spinach and alfredo (can add onions if you like)


1 Package Shirataki Noodles. Drain. Parboil for 4 minutes. Drain fully again.

In a sauce pan on med or med high, add evoo and 3 tbs panchetta.
When panchetta starts to get crispy, add 4 cups spinach (it cooks down). Stir. When spinach is wilted add 1/4 cup alfredo sauce (i found one that has 2 carbs for this amount). Stir. Add in noodles. Stir, add salt and pepper. Enjoy!


Total Carbs

Shirataki noodles - 2 net carbs (check your brand)
spinach - 1 net carb
panchetta - 0 net carbs
evoo - 0
Alfredo = 2

Total 5 carbs

I had a baked chicken breast with some cheese melted on it and two tbsp's of salsa. 2.5 net carbs.

It was yummy

Tonight I'm having breakfast for dinner - sausage, egg, and cheese quiche and a green salad - mixed greens, English cucumber, and honey mustard dressing. YUM!

I had breakfast for dinner too! I had 4 pieces of bacon and 2 eggs. I put two pieces of bacon aside with some spinach and feta for a snack later. I need to up my carbs for vegtables for today.

Default Dinner at Outback Steakhouse...

Early dinner at Outback. For the second week in a row, I watched one of those wretched onions sit in the middle of the table...but I just ignored the nasty blooming glob of fried white flour and salt. I ordered:

8 oz. prime rib (brought half home)
house salad with bleu cheese dressing (gave away the croutons)
steamed veggies (picked out the carrots)
unsweetened iced tea

I made coney island chili. It was yummy! Hamburger, tomato paste, onion, garlic, mustard, seasonings, chopped jalapeno and a little bit of jalapeno juice. I topped it with some mozzarella cheese and had that and a salad.

That chili sounds good! I might have to make some, it would be good to have some pre made food so I don't have to get up early just to make breakfast and lunch every day.

Dinner last night wasn't the greatest, I had 2 carbs with a pepperoni and cheedar cheese. It was one of those combo packs you get at the gas station. My friend had a baby so we were running around to go see her, then on the way back I hit up the store because I was just beat (we bus and skytrain everywhere so everything just takes longer)

I went out to dinner tonight and had a salad (I brought a little container of my own dressing from home), gazpacho, and a peppered New York steak with broccoli and butter.

Came from visiting my daughters...always fun, but I miss them the minute I leave. Too tired to cook, so I cleaned out the refrigerator.

I had take out for the first time since starting induction, I got the mediterranean salad from panagos which has lettuce, feta, olives, green peppers, onions, cherry tomatoes, with some chicken on top. As per their website, minusing the fibre it was only 10 net carbs with the balsamic dressing!

Which is great for me because I find I struggle with getting enough carbs, or enough calories (some things are just so high carb and low calorie, or high calorie and low carb!)

I was in a weird food mood tonight. I didn't feel like food. Just dessert!

I had a bowl of cottage cheese with SF pancake syrup and macadamia nuts and a big bowl of greens. Kinda random but it hit the spot .

Default Lunch out...dinner in!

I had a great lunch out today: Grouper Salad Melt with tomato and provolone...minus the English muffin.

Easy dinner: the Bacon and Ham variation of the Breakfast/Brunch quiche.

And now I have my breakfast all made for the next several days...just pop a slice in the microwave.
