FYI - I hated the Cheesecake pudding as a pudding, but it makes an excellent waffle.

Oooh, now there's an idea I'd never thought of. Didn't think much of the cheesecake as a pudding either, but I love waffles and pancakes. Thanks for that, Wahoofan! :)

I made the cheesecake shake/pudding mix...bleeech!!!! But thanks for the idea to make waffles! Is it an easy recipe?

Very easy!

IP Waffles

1 packet pudding
1 egg white
3/8 tsp baking powder
1/4 tsp salt
Enough milk or water to make it pourable, like regular waffle batter

Pour in heated waffle iron. Cook until steam stops.

It makes a decent pancake, too, but you need to make it a little thicker than the average pancake mix or it doesn't settle nicely in the pan and rise into a good pancake. Make sure the pan is preheated, too. :)

Actually, depending on how much fat I have had that day in other meals, I either leave it in or throw it in the trash. While I'm still over 200lbs, I'm allowing myself more fat/calories than strict P1 calls for. But I don't want to be a bad influence on other people so I don't include that when sharing ideas/recipes to help others.

I do throw out yolks when making eggs though. You can buy cartons of just whites, but I've never seen them at a price better than buying whole eggs so I just toss the yolks.

Thanks again for the recipe. I just made pancakes with the strawberry pudding I had. I enjoyed it very much...being the first time I've had anything bread like since Sept. 2. I really wished I could eat about 5 times as many. That bothers me that my appetite is so big...I just have to get my mind on something else!
