Roasted Red Pepper And Jalapeno Hamburger Bun
 
ok.....so by now,,,,you guys know i love my buns!!....ok, that didn't come out exactly right...NO BUN PUN intended!! :rofl:

ok...so now you guys know that I love have my hamburger on a bun...and this is my newest version....made with the IP POTATO PUREE!!!!

ROASTED RED PEPPER & JALAPENO BUN!!!


i started by making my english muffin type recipe for a bun...instead of the crepe mix...i started with the IP POTATO PUREE MIX....

1 potato puree packet
1 tsp baking powder
4 tbsp water
2 tbsp milk
1 tsp evoo
2 tbsp diced roasted red pepper
7-8 diced jalapenos baby!! YUM!!

mix all in magic bullet til blended and cook in non stick skillet in an english muffin ring!! i cooked 3 mins on each side over medium heat and used non stick spray...be sure to spray your ring too!

ahhhhhh dinner is served!!!!!!!!!!!!!!!
i topped my burger with lettuce, mustard, 1 tbsp of 1 carb heinz ketchup, grilled peppers and in the last minute i add my sliced onions and soft sauteed onions with just a wee bit of braggs amino for color for about 30 seconds.,,,but check with your own coach before doing the onions. I use 93/7 lean ground beef.

i started with leftover roasted tomatoes...some of the grilled red peppers...and braggs amino onions...some fresh dice green onions and 3 oz leftover grilled chicken breast...

heat through and then add to a large bowl of spinach and butter leaf lettuce!!! no dressing needed....the juice form the tomatos and lime juice makes ITS OWN fab dressing already ooozing and hugging the lettuce and giving it a warm wilted effect...

OH YEAH BABY!!!!

ALMOST LIKE CORNBREAD....almost.....
 
so the other day i tried to think of how i might be able to make something similar to cornbread!!! cause this southern chic misses cornbread!!

i mixed 1 packet of IP POTATO PUREE...and 1 packet of IP CRISPY CEREAL MIX...and got a nice result resembling something similar to cornbread!!

it all started with this gift i got for mothers day... WHOOPIE PIE baking pan!!

its just been sitting in mt cabinet....staring at me....tempting me....so i thought i'd finally put it to good use!!

I STARTED WITH THESE 2 PACKETS...

i whipped 1 egg white in my magic bullet...added 4 tbsp water....mixed again...

to my packets i added 1 tsp baking powder, and 1 tbsp rosemary (optional), and a dash garlic powder


mixed all together in magic bullet.

i sprayed my pan with non stick spray and rolled out 4 balls....and added them to my pan, spacing them out so they cook evenly.

baked on 400 for about 17 mins or until toasty browned on top!!

they look like cornbread muffins!!

dh and i had one each with supper....i sprayed mine with a little ICBINB spray....yum....this was dense...thick...not rubbery....and almost had the taste of cornbread!! woot woot!!

the other 2 muffins...i diced and toasted in the pan for CROUTONS!!

Salmon Bisque
 
....so i love my veggie purees....love them!!! here is one way i use my cauliflower puree...

SALMON BISQUE

i start with sauteing diced cauliflower, red bell peppers, yellow bell peppers and green onions....then i add salt, pepper, old bay seasoning to taste...i like a LOT....and some red pepper flakes!!....and a dash or 2 or 10 of hot sauce....to your taste....but i like it SPICY!!

once they are soft i add 1/2 cup chicken broth....i use college inn 5 calorie a can broth....and simmer til tender.

then i puree them all into the magic bullet...adding a little broth as needed...but not too much cause this is THICK BISQUE!!

in the same pan...i heat up some store bought salmon...fresh would be great but i don't have any!! haha

Have you tried making your buns with the crispy cereal? I have three of those and want to try making a bread type of item...I did see your cornbread recipe and it looks awesome I just don't have a potato puree right now (will get one at WI tomorrow). Anyway, just wondering if you've got any savory recipes for the cereal?

Now that I am starving. Gosh, I've been pondering this recipes and drooling (minute please, wiping down the keyboard).

Does anyone have an alternative for the Crepe Mix or the Potato Puree? I am doing the Alt IP Products and haven't seen this mentioned in any of the blogs yet.
