I'm at the point where I know what to eat to be healthy and how much as well. My doc has a plate on the wall that shows how we should eat and told me that I could use that as a guideline since I don't want to count calories, carbs or points any more. After trying so many different things for almost a year since I learned that I was T2 diabetic, I have decided that I like this idea and it is so simple that it is so easy to use it as a guideline. It is also IE friendly and as far the slow weight loss, I lose slowly any way so no big deal there for me. I noticed someone on the General Diet threads mentioned healthy carbs which I'm switching to rather than white starches so I looked up the Carb Lovers diet. I've been seeing their book in the store and sluffed it off not realizing what it was. It is actually the way I have decided that Iam going to eat. Hope Walmart still has the book when I go back so I can get a copy of it.

Well there was an day after Easter miracle at my house. My daughter in law loves to bake and made this wonderful cake for Easter with an awesome homemade Chocolate icing, ate a piece in the afternoon and another one in the evening and then Monday morning the miracle happened--I packed it up and threw the rest in the garbage! Yep me that loves Chocolate icing, threw a cake away!

I'm not sure I can call my Easter thing an accomplishment because I am still shocked by it. I absolutely love certain Easter goodies like the little marshmellow peeps. I didn't buy and Easter stuff this time. I went to the store when I left the beauty shop like I always do, but I never even saw any of the stuff. I know I had to pass all the stuff at the front of the store and I remember seeing them putting all the Easter basket stuff and goodies to go in them at the end of several ilse where they always display that kind of stuff, but I don't remember seeing any of it. I'm still amazed, but thankful I didn't buy any or eat any of it.

I've had a very nice day. Didn't think about food all day. DH and I went out to eat and I enjoyed ordering exactly what I wanted and enjoyed every bite. Ended up going to the bookstore to get the last Carb Lovers Diet book they had, because Walmart had just about every diet book you could think of out there, but this one. This book will be a challenge because it says they have scientific proof that you can lose weight eating good carbs. Where the challenge comes in is that I've been convinced for so long that all starchy carbs are bad. As we learn in IE there are no good/bad foods, maybe this book will help me with that issue. It speaks of increasing carb intake and upping the percentage of a type of carb called "Resistant Starch" which is a kind of carb getting losts of attention by scientific circles. It is called "Resistant Starch" because it resists digestion. I've been told for so long that I can't eat potatoes and I am surprised and pleased to know that potatoes are a Resistant Starch. From what I've read so far, I can understand why my doctor wants me to eat this way. It is actually so similar to eating healthy carbs like grains, fruits and veggies. An easy way of IE because it pretty much helps me see that IE is a very good way to eat.
I really don't think a lot about good foods, bad foods. I just try to eat less of everything. If I want potato chips I eat 3. It only takes a little to get the desired taste. Today is my son's 36th birthday and I am making him chocolate cake!!.

Carolr I heard someone say that after the first few bites of what we eat a food that it doesn't taste as good as those first few bites. I'm finding that now that I can have anything I want that I don't have the desire for certain foods any more. I know when I go to Ryan's to eat (one of my favorite places to eat) that I only put a few bites of the foods I want to eat. The really great pleasure I get eating there now is that I don't feel like I have to start with a big salad. I can have one if I want it but I don't have to eat it. I usually have foods there that I don't or won't fix at home. And one or 2 bites satisfies my taste for it. I don't even go to the dessert table. I know I'm going to eat carrot cake at Ryan's so I just have DH get me a small slice that way I don't get tempted to eat more than I had planned to eat. It is really nice to leave there satisfied because I ate what I wanted and I am not stuffed to the gills. A great feeling.
Of course, I'm having to eat to control blood sugar so I had a whole grain muffin with egg, cheese and raw spinach and had tacos for lunch. It felt great to eat what I wanted and since I'm not really following a diet, I don't feel I have to have another meal later unless I want one. No heavy feeling and no pressure that I have to eat a certain food or a certain amount of food. I have to admit that the freedom feels really great. I've been at this point before on IE and end up going back to try a diet. I really hope I'm past that this time. I like some of the ideas I read in this new book, but I don't want to get caught up in the dieting thing again. I like the freedom to eat if I'm hungry and stop when I feel satisfied. Carolr It was interesting although I don't think I would want to do it.
I am really enjoying IE this time and the little tricks and ways of preparing meals I've learned in the Carb Lovers Diet book is really helping me so that I feel more in control of my IE way of life. Although the book does a quick start called Kick Start which is 1200 calories a day, I'm not counting. Just eating what I like when I'm hungry and eating until satisfied. And it is working. Fasting Blood Sugar is coming back down and the weight I gained when I switched to eating carbs instead of low carbing has started coming back off. According to the book, instead of losing water weight like you do initially with low carb, I'm actually losing fat now. It will be interesting to see how all this progresses.
