Today is my weekend meal breakfast:
3 slices reduced fat/low sodium turkey bacon
1 oat bran galette with non fat whipped topping
1 poached egg
Starbucks coffee with stevia and nonfat milk

3 chocolate chip cookies at 8:30am, then I needed protein so I baked skinless chicken thighs & chopped them up & put them in a salad & ate again @ 11am.

Normally I make a huge veggie-cheese omelette, w bacon I cook in my microwave to drain off the fat as it cooks.

I baked & froze chicken today to use in recipes this week.

Apparently it's my 8 year old's favorite too, and she's been eating half of my breakfast after finishing her own! So this morning I had 1/8 of a frittata, then supplemented with some parm crisps that I threw in my bag.

Parmcrisps are a store bought item LINK, but you can make your own by just grating some parmesan onto a plate in piles and microwaving or baking for a few minutes. RECIPE

Cabbage/bacon frittata. My last one I did the same cabbage and bacon, but seasoned it with Italian seasoning and added sliced tomatoes. It was quite good, but I went back to the standard for this week.
