Chicken! As often as I can stand to eat it. :P Not sick of it yet, haha. I grill it because that tastes best to me. Lately I've been putting teriyaki sauce (spelled wrong I'm sure) on it. And then I eat steamed veggies with it too. My eyes are bigger than my stomach so I always make too many freaking vegetables.

Last night was a buffalo chicken wrap with broccoli slaw, homemade blue cheese dressing, two kinds of hot sauce, spinach, and tomatoes.

Tonight will probably be a veggie/chicken quesadilla. Leftover grilled chicken is on the menu until it's gone.

Tonight is sauteed chicken with artichokes and mushrooms with a little wine and garlic. So yummy it doesn't even need carbs Add a sprinkle of parm to finish and it's 380 calories worth of delish

Tonight we are smoking a chicken. With that is whipped potatoes/carrots (yes, whipped together...so yummy!) and a peach/white cheddar spinach salad with homemade baslamic dressing

homemade baked "eggrolls'--i make them diff every time--tonight will have cabbage, carrots shredded, black beans, shredded porkloin, garlic and whatever blend of spices i feel like adding at the time--usually some chopped cilantro and cumin sometimes i throw in some diced green olives with a tbsn of the brine--just kinda wing it then bake
they come out to about 130-140 cal each filled with yummy stuff and i have a quick hand-held meal to grab and go later in the week!

Yesterday I simmered 3 pounds of boneless skinless chicken thighs in beer and bbq sauce so dinner was bbq chicken on a bagel. I also made a huge pot of beans, so lunch today is bbq chicken and pinto beans.

Dinner tonight - maybe a fritatta with kale and garlic scape pesto. My CSA box arrives with fresh eggs and lots of veggies.

Last night was baked boneless pork loin with seasoned bread crumbs (shake 'n' bake style), homemade macaroni/cauliflower cheese using 2% velveeta cheese and green beans sauteed with 1 tbsp light butter.

Tonight is... pizza since I'm going over to my cousin's but I will have a huge salad with some cottage cheese, spinach, lettuce, cherry tomatoes, shredded carrots and some vinegar/jalapeno brine for dressing before I go so I won't be as hungry and eat a ton of pizza or something like that.

Shrimp tacos!
2 hard taco shells
avocado
zucchini
mushrooms
shrimp
salsa.

About 450 calories, and I had cheese and crackers (250) for appetizer. Skipping the beer tonight... weigh in is tomorrow.
