  • Going easy tonight...deep dish pizza casserole with canadian bacon and pineapple.
  • Running an obstacle course race tomorrow.

    Dinner tonight is: angel hair pasta with kale and garlic scape pesto and shrimp. And probably cheese and crackers since I have a slight addiction to them.
  • chicken and veggie stir fry with broccoli, snow peas, carrots, mushrooms and red peppers over rice. A side of pot stickers if anyone is particularly hungry.

    THis is exactly what I'm having, minus the green peppers.

    Will also have sliced cucumbers with a bit of Greek yogurt/ranch dressing.
  • Chicken enchiladas with green chile sauce.

    Yum!! I need to make this soon. I have not had that in years!
  • Baked Spaghetti (whole wheat spaghetti, homemade sauce, shredded mozzarella) and a Supergreens salad with balsamic vinaigrette.
  • Obstacle course race today!

    Housed a cheeseburger and a beer at the end, then ate a small pizza at the bar afterwards at about 3, which was my dinner (as I'm in bed now at 8pm.)

    Still came in only 300 calories above my limit!

    Not dinner, but would serve as dinner (and may have as dinner tonight, even): a beautiful chicken liver salad. Sliced apples, sliced potatoes & chicken livers, seasoned them with salt & pepper and fried in a little butter & olive oil. Put it all on a bed of lettuce, then deglazed the pan with soya sauce & rice wine vinegar for a quick dressing. 500 cals & amazing, plus chicken livers are very cheap and nutritious! I guess you could cut calories by not frying in butter & oil, but I think the results - the lovely caramelish glaze on the apples, in particular - are worth the few extra calories.

  • We're having pulled pork sandwiches for Father's Day....going to be challenging to keep this healthy. Gonna try to load that plate up with veggies!

  • I eat most of my calories early in the day.
    Today I had a Black Bean Chipotle burger, without the bun.
    But most of my plate was full of roasted zucchini and corn. Yum!
    And it only ends up being around 200 calories. I end up having a night time snack so I was able to get in all my calories.
  • We're doing a Greek style pizza on the smoker with salad.
