    Not dinner, but would serve as dinner (and may have as dinner tonight, even): a beautiful chicken liver salad. Sliced apples, sliced potatoes & chicken livers, seasoned them with salt & pepper and fried in a little butter & olive oil. Put it all on a bed of lettuce, then deglazed the pan with soya sauce & rice wine vinegar for a quick dressing. 500 cals & amazing, plus chicken livers are very cheap and nutritious! I guess you could cut calories by not frying in butter & oil, but I think the results - the lovely caramelish glaze on the apples, in particular - are worth the few extra calories.

  • Leftovers from yesterday's Father's day cookout: Asian 3 bean salad, crab cake, and maybe a little bit of filet mignon.
  • I've been on the road all day, so I'm eating the Berry Almond Chicken salad at Wendy's
  • A little cold sliced steak, cheese and crackers, and cooking some taco meat. Maybe have that with rice? I have to check the cals. I just got back from swimming and am hungry!

    It seems like it might turn out like a crustless quiche but we actually haven't tried it yet! It's been way too hot to cook so we've been having salads and wraps for days now. When the part finally arrives to fix our AC it's the first thing on my list to make!
  • Tonight for dinner I'm making chicken parmesan w/ penne pasta and a whole bunch of veggies on the side.
  • Ginger-soy marinated grilled chicken breasts on whole wheat hamburger buns with a huge veggie salad.
  • 7oz Salmon steak, just for one cauliflower and cheese (40 cals) cucumbers with light ranch. I haven't totaled up the calories yet but I have 600 to play with tonight.
  • Veggie chili with brown rice, raw greens & avocado salad, orange & banana.
  • Tonight was suppose to be leftover turkey meatloaf and some roasted broccolli. But 3 out of the 4 of us are sick, so I think my partner is bringing home Pho Ga. It will be high in sodium but not too high in calories, and I'll only eat half of the vermicelli noodles.
  • Gnocci with sage butter and spinach.

  • Maple dijon salmon with roasted asparagus and maybe sauteed cabbage/pepper/onion mixed with a little bit of rice as a bed for it all.
  • Simple and fast tonight - Broccoli and asparagus stir fry over brown rice.
