beef in low soduim gravy with oinons and mushrooms over egg noodles total weight 8oz and 8oz of cut red beets

Lunches are 2 and half sandwich eatin at 1/2 sandwich about every 2 hours total weight of a whole sandwich 3oz. Whole wheat bread, 3 slices of turkery 1 slice of sharp american cheese, very little mayo and mustard. 2 apples sliced, 3 4oz bags of carrots and 10 almonds. I some how fit that all into my small cooler for work lol.

I'm going to make myself some low-fat stroganoff. I use the regular recipe but substitute low fat cream of mushroom soup and sour cream.

I had fresh squash and vidalia onions with some cheese sprinkled on top, chicken breast and fresh green beans.

I also went to our local river walk and walked for 90 minutes.

Last night was cajun chicken alfredo (sliced up chicken breast cooked with cajun spices, dump on a jar of light alfredo sauce, cook up some whole wheat fettucine, stir it all together) and some broccoli. Tonight is up for grabs. Going to check in here this afternoon and see what sounds good. :-) Good thread.

Some really, really great ideas here. I'm getting hungry just reading about all this yummy stuff we're eating.

Tonight's dinner:

A huge veggie stir-fry (HUGE) - with broccoli, spinach, cauliflower, peppers, mushrooms, green beans and zucchini. Served with an egg white omlette.

For lunch I had my usual: Whole wheat sandwich with Dijon, 3 oz of lean deli ham, 1 oz of low fat cheese, 2 oz of baby carrots, 2 oz of red grapes, big glass of water. For dessert a cup of hot chai and one piece of Dove dark chocolate.

For dinner we are going out with friends and I picked that we go to Applebees where I have already looked at their Weight Watchers menu and will be having the chicken breast with black bean and corn salsa and steamed veggies. This will be a first for me to actually get something that is supposed to be tasty and healthy at a restaurant. I'm excited!

I had that a few months ago. We don't normally go to Applebees but got it as take out during finals (I was very against eating fast food while studying). It was really good. You might want to see if they could not butter the veggies because they had a lot more butter then I expected. Enjoy.

Yesterday Dinner: 3 slices of oven cooked lean turkey meat (sold in packages), 1 silce of swiss chesse, half a slice of whole wheat bread, and one large spoon of farmers cheese (sort of like cottage cheese), and 1/4 of the bottle of light peach tea (cold)
Tonight Dinner: 1 chicken breast (fried together total of 2-3 breasts, on a 1/2 tablespoon of oil and water with garlic salt and other spices; because of water chiken is moist and juicy), romanie leafs, and a small cucumber, no dressing - chicken juiciness is enough. Water to drink (I would have tea, but I rather not have it if I should not eat 2 teaspoons of sugar with it). [prep time all together 20min]

I purposely included how things were cooked, and would be happy to share. I find it very helpful, because we can learn how to cook from each other. What do you girls think?

Tonight I had a small baked potato ( with skin), some hummus with it, and a salad made from beets, tomatoes and 3 slices of Avocado. I did my calorie intake today and still am short 300 calories, but because of TOM am not that hungry, I will probably grab some fruit later on.

DH isn't home for dinner so I made myself an egg white omelet with my new sandwich grill. Not enough veggies even in my veggie omelet so I also had some green beans on the side.

Lunch was yogurt, .20 cup of walnuts and at 3:00 I had a romaine salad with tomato and cheese, tiny bit of ranch, carrots, dinner is beans, chicken breast, broccoli, cauliflour

Pesto Marinated Grilled Chicken Breast with grilled zucchini, peppers and onions. Lots and lots of zucchini that is.
