Question So, What's for Dinner Tonight? July

We had this thread going a while ago and it was pretty popular and then it kind of peetered out. Let's give it a go again and see what happens. You can supply the recipe, the nutritional value or whatever else you want. You can even throw in lunch ideas as well.

Tonight's Dinner:

Fresh Salmon made with homemade pesto sauce and baked in the oven
Roasted Green beans and garlic (lots of them)

Great idea!

I'm having chicken fajitas - YUMMY! BBQ chicken on La Tortilla's with lots of fresh tomatoes, onions and salsa. Then I'll have some watermelon later in the evening!

I tend to eat seperate meals from my family, because if I ate what they are eating I would be gaining instead of loosing. Tonight they will be eating either nachos, or quesidillas with fresh pico de gallo and some refried beans, I am thinking a salad with tuna, but may end up with some of the refried beans( low low fat, 1 % ), 2 corn tortillas and pico de gallo. Who knows?

There's just me to cook for so I have a "stash" of suff in my freezer.
Tonight I will make fajitas using two small whole wheat tortillas, 3 oz. of leftover steak, peppers, onions and some sugarfree salasa. I think the guacamole I made Friday may still be OK.

My meals are different than my kids so Ill just put mine.

I had a big lunch so for dinner I had tuna salad, low fat wheat crackers, and 2 pieces of cantaloupe. The tuna was in water, fat free mayo, dill spears diced, and egg whites.

Tuesday -

Salmon
Ear of sweet corn
steamed broccoli

I call this dinner "Loser Meal 1" because it's so simple (usually I have a sweet potato instead of the corn, but can't resist the corn when it's in season!)

(yes, there are a few other self-titled "loser" meals - veggie tacos, omelets, etc)

Dinner change for me...
I forgot I had some orange beets I bought Sunday, will be roasting this, and eaten with a roasted sweet potato with some hummus and some pico de gallo. I know it sounds weird but I love sweet potatoes with butter, so I have discovered it taste just as good with hummus. I am not sure how much protein is in this yet, but I did eat 2 tofu dogs with lots of protein for lunch.

I will not cook separate meals, so hubbie eats healthy whether he likes it or not! Seriously, though he likes my new 'style' of cooking.

We are having leftover grilled chicken and roasted veggies and salad. Desert will be fresh raspberries, blueberries, and strawberries w/ a tiny squirt of non-fat whipped cream.


(Thank you for sharing about roasted green beans, sweet potato and beets! I hadn't thought of trying these roasted! I will be soon!)

Tonight we're having leftover meatloaf (it's stuffed with lots of yummy veggies) and baked zucchini with a sprinkling of garlic powder, oregano, and parmesan cheese.

Roasted potatoes, onions, carrots, and zuchini, seasoned with salt, pepper, garlic, made with Pam spray. Then maybe some leftover Hickory Smoked flavored hot "wings" (chicken breast). Ummmm..........Yummo!
