Here is a great cookie recipe that gives you a treat for low points. Enjoy
It is OK to indulge your sweet tooth occasionally, especially with tasty reduced-fat cookies such as these!
Lemon Poppy Seed Cookies
1/3 cup margarine, softened
2/3 cup sugar
1 egg, beaten
1 tablespoon skim milk
1 tablespoon fresh lemon juice
1 teaspoon grated lemon rind
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup poppy seeds
Cream margarine; gradually add sugar, beating well at medium speed of an electric mixer until light and fluffy.
Add egg, beating well. Add skim milk, lemon juice and lemon rind, beating well.
Combine flour, baking soda and salt; add to creamed mixture, beating well.
Stir in poppy seeds.
Divide dough into 4 equal portions; place each portion on a sheet of plastic wrap, and shape into a 4-inch x 2-inch log. Wrap logs in plastic wrap, and refrigerate or freeze until firm.
Unwrap logs and cut into 1/4-inch slices. Place 1 inch apart on ungreased cookie sheets. Bake at 350 degrees for 6 to 8 minutes or until lightly browned. Cool on wire racks.
