Default My dinner menu for the week

Here's my menu for the week...if you want any recipe let me know

Tacos
Rice
Beans

Steak
Potatoes

Baked Potato Soup (4 pts per cup)

Hiii Mom.. Your menu looks deelish.. I'm interested in the Chicken Rollatini with pasta and salad and the Steak one looks good!

I can post the chicken polletini tonight for you. The Steak is just that a tri tip I am going to broil with some good spices and I am going to make a mashed potato out of potatoes & turnips

Chicken Rolatini Parmigian

8 thin chicken cutlets, 3 oz each
1/2 cup whole wheat Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese, divided
6 egg beaters
5 oz frozen spinach, squeezed dry of any liquid (use an old towel to do this and squeeze it all out)
6 tbsp part skim ricotta cheese
6 oz part skim mozzarella
olive oil non-stick spray
1 cup pomodoro sauce or your favorite marinara sauce
salt and pepper to taste


Wash and dry cutlets, season with salt and pepper.

Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.

Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another.

Shred or finely chop 1.5 oz of mozzarella cheese and combine with remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese.

Lay chicken cutlets down on a flat surface and spread 2 tbsp of spinach mixture on each cutlet. Loosely roll each one and keep seam side down.

Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spray with olive oil.

Bake 25 minutes. Remove from oven, top with sauce then cheese.

Bake until cheese is melted and bubbling, about 3 more minutes.

I can't remember where I got this recipe but I am looking forward to trying it...we love stuffed chicken breast and we love chicken paremesan

Hello mom2:

Are your points values the old WW points plan? Or the new PointsPlus? (I'm doin the old plan). I would LOVE the recipe for your poppyseed chicken!

Also, what's the serving size of your Chicken Rollatini? Sorry to have so many requests, lol =)

Don't worry about questions...If I can help in any way this is usually it. I am doing the the old Momentum plan. I believe the serving size for the chicken roll up is 1 breast so it serves 8

Here's the recipe for poppy seed chicken
1 lb. Boneless Skinless Chicken
1 Can Low Fat Cream of Chicken Soup (I actually used Trader Joe's Cream of Mushroom)
1 8 oz. container of Fat Free Sour Cream
1 Tube of Reduced Fat Ritz Crackers (I used like 18 of them not the whole container)
1 tsp salt
1 tsp pepper
1 Tbsp. of Poppyseeds

Original directions: Cook Chicken. Cut it up. Mix chicken with soup and sour cream. Pour into casserole dish.
Crush Crackers, mix with margarine and poppy seeds, and spread on top.
Bake at 350 for 30 minutes.

My Directions: cook up chicken, chop, mix chicken, soup, sour cream, poppy seeds, salt & pepper. Crush crackers and top the casserole. Bake @ 350 for 30 minutes

Original recipe called for lots of butter mixed with the crackers but I don't do that. This serves 4.

Last night I used 2 lbs of chicken breast but left the rest the same and it served 6 and was still so yummy...I have to have this over rice and when I calculated it with my ingredients (low fat sour cream and trader joe's cream of mushroom soup) it came out to be 6.5 points per serving with the extra chicken. My family loves this...I originally found it years ago in an old weight watchers cookbook

Thanks for the recipe!! sounds yummy! Hubby & ! are doing the PP program.. any idea how many points per chicken serving that is going to be? also "egg beaters" are those the ones that come in the lil carton? Can i just use reg eggs instead?

No idea on how many PP that may be...sorry. Yes egg beaters are the stuff that come in a carton. You can use eggs but you will need to add the points for the or even try egg whites.

I have a recipe for the chicken taco chili... SO delicious and filling. I think I need to make that tomorrow on my day off. Then I can take leftovers to work for Friday, Sat, and Sunday.
