Heeheee...I just ate asparagus and the first piece was slimy so I naturally spit it out in a hurry (luckily I was home and not in public). Cooked al dente though, I can handle them.

Can't stand beets unless they are pickled, cauliflower--ick!! (read somewhere a while back that you can get samonilla from it?), brussel sprouts, asparagus (I've even bought the swans stuff and tried to grill it-ick and double ick!), lima beans (how can somthing put in a SOUP be DRY???), chick peas (especially if turned into hummus--howly cow was that NASTY), cooked celery (aka stringy snot), eggplant unless it is battered and fried (not good for me I know--but soooo yummy!), uncooked carrots, cooked zucchini (except in bread) is the most nasty thing on the planet--pure snot (barf!), and mushrooms, but not because I don't like them in some things, but I'm allergic to them :(

I read once that dandelions--the whole plant, flower head, leaves, root--are supposed to be packed with nutrients and such and really good for you (they were brought over to america as a cash crop?)--is the only way to get them to go out in the back yard and yank them up?

Eggplant, cauliflower, and any veg that is overcooked. I'm also not a huge fan of cooked celery but I only tend to find it in homemade soups prepared by people I adore, so I don't want to say anything and I eat it.

nichdo - your comment about lima beans made me giggle out loud. (and welcome to the site!)

I love vegetables, but there are several I cant stomach:

Onions, eggplant, mushrooms (do these count?), greens (I like spinach and all - just not southern greens), etc. Cauliflower is just meh.

I cannot stand brussel sprouts or spinach. I will never be a brussel sprout eater or a spinach eater. I just cannot deal with the taste.

I'm shocked so many people don't like cauliflower or broccoli. Those two are my favorite vegetables. I love them.

I like all vegetables except for cooked beets, for some reason they tasted like dirt to me when I was a child so I haven't tasted them in years, probably should give them another try.

I pretty much eat everything but I hate avocado. It makes me puke. I have no problem with guacamole or microscopic bits of avocado hidden in a salad but anything bigger than that (= I will be able to taste) makes my stomach churn.
I also don't eat artichokes - they are very expensive here and I tasted them only once and was not impressed. As a result, I haven't tried them since.
Oh, and okra. My BF once made gumbo soup that was good (tons of butter in it, no wonder it tasted so good) but the slimy okra has no place in my kitchen.

Celery. I had some once that made me sick when I was a kid (not sure why), and I guess it's aversion therapy. I can eat it in soups, but not raw. :dizzy:

Lima beans and raw onions are the only veggies I hate.

I don't think I've met a vegetable that is served raw that I don't like. Love all raw veggies.

But there are a lot of cooked veggies I don't like especially carrots. Cooked carrots gross me out. I also don't care for lima beans.

But I am a convert to brussel sprouts. Hated them for many years, but for some reason I find them delicious now.

TOMATOES!! But of course I will eat derivatives, ketchup, pasta sauce, etc...
MOST FRUIT!! The only fruit I eat is Fuji apples and bananas that have no black spots on them. I'm very picky!

I love most veggies, but I remembered one of the rare exceptions when I was eating a salad in a raw food place the other day. Fennel. I don't like it raw or cooked. My husband had a beetroot, fennel and pear juice with his meal and after having a small sip of that, I had to wash my mouth out with wine to compensate. ;-)
