  • Bok Choy (steamed simply with a sprinkle of sesame oil and Accent)
  • Arugula (peppery and delicious, sauteed with a little garlic or eaten raw with a drizzle of light dressing)
  • Asparagus (a perfect refrigerator snack when steamed, chilled, and tossed with lemon juice)
  • Cauliflower (a kitchen staple, incredibly versatile -- especially when riced)

I have never tried bok choy or arugula, so these two are being added to my shopping list. It's so helpful having the internet because any time you buy a new veggie you can google for ways to prepare it and there's usually pictures, too. They are no longer your grandmothers vegetables.

I like my asparagus grilled, on a stove top grill pan sprayed with olive oil spray. I like it on the thin side, and I like it cooked to the point that it is slightly browned with just a sprinkling of salt and pepper.

I also like corn on the cob grilled and the kernels browned. I recently saw a picture of it buttered and sprinkled with some cayenne. Looked really great, so I will be trying that, too.

Every time I go back to eating more veggies, both my weight and blood sugar start to drop. Can't be a bad thing!!

Kohlrabi is another one I've never tried as an adult. I remember my mother using it when I was a kid but I don't remember how she prepared it.
