Well, we started in this thread, which mentions the plan for anyone who is interested in joining this week! (Although reading the book is highly recommended, both for nutritional information and for inspiration)
How did Week One go for y'all? I'm down about five pounds, so I'm inspired to keep at it! Salads, here I come!
Hello ladies I hope your week end weas safe and fun. I had a good week end and depsite a party and some cheese pizza I lost another 1/2 of a pound so that brings me to 3 pounds for the week. I was wondering if you think it would be ok to use some soy sour cream? Toffutie makes some killer stuff but I wonder if it would be ok? This week is going to go by quick for me beacuse my work secdual has changed some Is it Wednsday yet? Thursady is my 10 year aniversary and we are going out to Magionoz an Itian resterant so I plan to be really good till that meal then right back on plan for the next meal. I hope everyone is well and has a great day.
Hmm, soy sour cream... I don't know. Have you read the book? If you have, then you can take a look at the label and see how it measures up to the requirements for salt, fat, sugars, etc. Since it's a processed food, I wouldn't eat much -- but if it's pretty good nutritionally, you could use it sparingly to flavor the other stuff perhaps. I also think that if stretching a little like that keeps you otherwise on-track, then go for it. I think I've mentioned that I've been using my fruits as between-meal snacks -- well, that helps me to stick with the program otherwise. *shrug* Let us know how it goes. I'd love to try all the varieties of Tofutti stuff, but I live in a rural area where I'm lucky to find tofu.
We have a safeway near my work that has a lot of health foods a whole section of it. I guess I'm blessed to live in a urban ariea even though I would rather live in a rural one oh well.
do they have krugers/King Soopers ware you are? They also have a nice selection of health food. Since you've been veggie do you ever crave things I've been craving nocho cheese latelywich is not on programe.
There is a Kroeger's in the next county, and I shop there when I can. I bring a cooler and stock up on Amy's bean and black bean burritos. They have a few soy-based items, too, which is nice. Plus a good assortment of the shelf-stable stuff like falafel mix and couscous, along with some shelf-stable alternative "milks."
As for cravings... well, going vegan has been a lot easier than I expected. Once in awhile a pizza ad makes me think cheese pizza sounds good, but not enough to make me want to go out there and get it. (It helps that it's not primarily for health reasons, but for ethical reasons, that I'm vegan -- much easier to stick to my guns knowing it's about more than just myself.) I really thought I'd have a much harder time with it, but I was pleasantly suprised at the lack of cravings. I think if you remind yourself of why you're doing it and get all the nutrients (including calories) you need from plant foods, your body should ajust in a short time. Your taste buds will probably be very different at the end of the six weeks!
Ok well for the first week I was not a vegan. But for the next five I commit to being vegan with the exception of Thursday Night when I go out for our aniversary. I admierthat you are doing this for a ethical stance it's important. I'm looking forward to this week I bought some berries and will be makeing fruit salad. Also I thouhgt I'd make some soy pudding which is really oatmeal with fruit and oatmeal is on the program. have a wonderful day.

Mmm... that sounds good!
And I'll bet you'll be feeling a lot better five weeks from now! Keep up the good work!
Yummy Soy Breakfast Pudding
Ingredients:
1-1/2 cups oatmeal (quick or old fashioned)
2-1/2 cups Edensoy Organic Soy Beverage - Vanilla
1/2 cup raisons or chopped dried fruit of choice
2/3 cup applesauce
3/4 cup lemon flavored fat - free yogurt
1 banana - sliced
1 small orange, peeled and chopped
Directions:
In large saucepan combine oatmeal and soy milk, cook according to package directions.
Add raisons, chopped dry fruit, applesauce, yogurt, and chopped oranges.
Stir gently to thoroughly heat fruits, add banana.
That pudding looks yummy. It wouldn't work for the first six weeks because of the dried fruit, but I suppose you could declare a "cheat" on that, or just use fresh fruit instead. It doesn't look bad for you at all -- thanks for sharing the recipe!
well if you soaked the dried fruit in soy milk first it would be ok because they do have that in the first 6 weeks. I think it's day two or three that has it.
I'm haveing a issue I need to go work out and I just can't seem to I have an hour till I get off work and just going home sounds good. What do you like to do for exercise?
I don't do much in the way of exercise. I can't afford the gym, my exercise bike is broken, and it's too hot to walk outside (*pout*). So, I'm planning on pulling out the exercise video collection and getting moving in my den. I'm having a hard time getting motivated though.
Hi Ladies! Great to read that everyone is doing so well. I haven't lost but I haven't gained which was good considering I only did E2L for 3 days last week. I did my Beach Diet: SlimFast, fruit, salads, & vodka! I'll be off the net and visiting family but will return June 12! See you then! Eat healthy!
