PS, tomorrow is the end of my original 21-day challenge. It didn't go as planned but all in all the enterprise was quite successful as I definitely have more control of food and have lost some weight and shed some elderly jeans. Hopefully, the trend will continue, but if it doesn't, I'll just try harder. I appreciate everyone who is participating on this thread as it's really helped a lot!

Elberta Crone hath made a surprising discovery: If one buyest the 4-pack o' peanut butter cups instead o' two 2-packs, one saveth 40 calories of worthless sugar and fat because the little cup things are smaller!!!! It be stuff like this that maketh EC's day!!!

In keeping with the quest to include more whole wheat, I found some REAL whole wheat spaghetti (not the "blended" kind that masquerades as whole grain but is really made with refined flour). It has considerably less calories than the white or blended kind and 7 grams of fiber per serving. My blood sugar is already thanking me and I haven't eaten it yet. Tomorrow I am going to try to make spaghetti alfredo with low fat alfredo sauce, cottage cheese and the whole wheat pasta!

Amarantha's Saturday menu:

About yesterday----don't ask....Let's just let that day slink away into oblivion. It was G's birthday and it was a feast day, but I overdid it. One of those 'in for a penny, in for a pound' kinda things.
Stepped on the scales this morning and I'd gained 4 pounds since yesterday morning. Impossible, I know, but still a little demoralizing!

Let us never speak of it again.......

Yo, Demon Food Slayer Eydie, worry not, it's just water weight from a little extra food. It's all good! Eating a lot in a day is actually a cry from thy metabolism, saith Elberta Crone (though she be not asked and have no scientific evidence to back this up). To maintain a healthy weight, she saith, you've gotta keep the ol' metabolism happy and thinking that every day's a feast day, so she saith thou probably did the right thing ... and humans were made (EC also pontificateth) to celebrate things with food ... it be not wrong, just has to be balanced out.

As for Amarantha, she had a good caloric day of 1680, won't bore thou Slayers with the menu as it was singularly uninteresting and contained too much Scots oats and sugar.

No interesting experimental recipes from EC as she hath gotten all excited about a kitchen gadget called THE ULTIMATE CHOPPER she saw on ye TV (she's weak minded and infocommercials get to her) and she be determined to have it, so we'll see what develops!

I've had a great food day! Sometimes it's worth it to have a couple of truly appalling food days so I can see how glorious good food can be! I'll check back later.

Well, I had a good calorie day: 1765, but it was a sugar-laden nutritional deficit! The Sugar be loose in Amarantha's neighborhood! Drank two EAS Carb Controls this evening to even out blood sugar! No use typing in a menu here, as thou canst guess what's on it!!! Later ...

SUGAR GET OUTTA TOWN!!! We don't want no sugar around! Sound off!! Sound off ... etc.

Sugar 's been attacking in this cold spell we're having!!! And I never got my healthy muffins baked. Here's my really not so healthy menu for today:

This exercise of posting a menu is really helpful as I found a math mistake and ate less than I thought, so I COULD (but won't) have another shake tonight. I think it'd be a good idea if I bought that handheld calorie counter thingie to start using when things get hectic in the spring.

Yo! Ok, dokey, sorry Eydie, dinna mean I was mad or anything, just thought maybe we were easing off on this thread and I dinna wanna push it. I like posting my menus here but not all by meownself so if you're staying, so will I!!! I totally understand being braindead at the end of the day. I think I'm kind of overtired as well but here's my menu ... the recipe for the muffins is on the main thread ... the crabcakes are frozen, BTW, and not super healthy but they don't have transfat so I think I'm ok with them ... maybe will try making my own soon ...

Hi all....

Just a few minutes ago, I tried a WW's Chocolate Smoothie mixed into my coffee... its a full calicum serving and since I only mixed it into the coffee its only 1 pt... and I thought delicious...
Only issue... in my opinion, a little pricey but I am going to see if there are
.. sf equivalents in the grocery store.. I know the sf hot choc brand used at my job advertises that its calicum fortified and if I'm right, 1/2 the calories but may not have as much calcium....BUT it is made w/ Splenda which DH tolerates better than the other SF substitutes..

....
and yes, I not been here much either but I've just been stretched in too many directions this week....

Am interested in the blueberry/cottage cheese recipe... think I might have all the ingredients here in the house.

That sounds good, Kaylets ... yea, a bit on the pricey side, but I think the "smoothie" aspect makes it sound like a Starbuck's special thingie or something.

Sorry I were cranky about no one coming to the Food Meetings ... been hangin' around w/Elberta Crone too much, methinks. She's extremely cranky these days due to lack of sugar in the palace!

Blueberry cottage cheese receipe? That soundeth quite good. I know a lot of people who eat blueberries with their cottage cheese in the summer ... I've blended both into smoothies.

It be extremely cold 'n rainy in Amarantha's neck o' the woods and she be taking the royal carriage to the mountains to work tonight. Will post today's menu tomorrow as I'm keeping to the straight and narrow and watching food like a hawk. Later ...

I just wanted to share that I have spent the last 2-3 weeks in a state of dehydration. I haven't been drinking much water at all. I have had to really refocus on getting several good "gulping" sessions during my workday, and it has helped.

I've just gotten down my first quart and am filling up my drinkie bottle for another...

Wow, for breakfast this morning I had chocolate. CHOCOLATE! I don't know what happened there. I was at work setting up a reception and there it was. -possessed I guess. Well, that's it. Just wanted to purge my soul. I'll check in later---maybe I can redeem myself!
