First of all, you should congratulate yourself for all the walking and toning you have done so far. That's a good accomplishment and will help you stay healthy!
Many of us have been surprised to find out that we had been eating more than we thought when we get around to adding up the calories--so it's not a disgrace.
Do you use a calorie tracking program? There are several to choose from--some are free on the web. They can make life easier. FitDay is one such program. Be sure to include everything you eat, every day. If you want to add a food, like the Lean Pockets, then some programs allow you to enter the information from the Nutrition Facts panel.
You should probably start with 1500 cals per day, and depending on your age and activity level (other than your walking), you may need to go lower.
One way not to feel so hungry is to make sure you get some protein with every meal--which you seem to be--and another way is to include more snacks, so you are having 5 or 6 "eating times" in the day. You may have to eat less at the main meals to allow some calories for your snacks.
You can expect to feel some hunger some of the time--that's normal.
