Menus for Saturday

  • What is on everyone's menu for today?

    B- banana/strawberry smoothie with ff milk
    L- lean ham in a big salad
    D- Taco Junk (recipe, it's core) and LC tortillas (1 pt each)
    snacks--- fruit or popcorn

    Here's the recipe for taco junk, in case anyone wants it:

    TACO JUNK
    1 lb xtra lean gr. beef
    1 (16 oz) can whole kernal corn
    1 (16 oz) can pinto beans, drained and rinsed
    1 (16 oz) can mexican stewed tomatoes
    1 envelope taco seasoning
    1 envelope ff ranch dressing

    Brown meat until done. Drain if needed. Return to pan. Add remaining ingrediants, cover, simmer for 1 hour.

    (if you are doing FP it's only 2 pts/cup)

    Tip: may simmer in crockpot for several hours too and may add salsa for extra flavor.

    I've never made this but many people have liked it so I'm trying it tonight.
  • So far today:

    1 cup oatmeal with skim milk
    1 decaf tea with sweetener and milk

    2 cups mixed lettuce
    1 can tuna packed in water (drained)
    2 tbsp fat free dressing
    1/2 tomato
    sliced cucumber
    some snow peas
    Crystal light

    Dinner tonight will probably be grilled steak with mushrooms, steaamed broccoli with lemon juice and a baked potato with Mrs. Dash on it. I have been trying to cut back on my salt intake. I will probably have fruit as a snack.
  • B: fruit salad, skim milk, 2 HB eggs
    L: spinach salad with veggies and can chicken on with ff raspberry pecan dressing
    D: Will be out with a VERY health conscious friend, so will do well!

    S: Fresh peach tonight (right from the farm) my great aunt lives up north and brought some down yesterdya!
  • FF Raspberry dressing
    Is the FF raspberry pecan dressing bottled? What brand? I love raspberry dressing, but don't think I have seen one with pecan.

    1/2 Tbl. maple syrup (.5 flexpoints)

    WW smoothie made with frozen strawberries & 1 C. FF milk

    1 bag of 94% fat free popcorn

    salad (lettuce, cucumber, tomatoes, radishes, red onion)
    a few cherry tomatoes
    1 Tbl. light vinagrette (.5 flexpoints)
    about 1 C. of chunky tomato soup

    some grapes

    grilled pork chop marinated in olive oil, garlic and soy sauce
    salad (same as above)
    broccoli
    1 Tbl. light vinagrette (.5 flexpoints)
    SF, FF butterscotch pudding

    L: fajita chicken salad (2pts. AP cheese)
    chips (2 pts. AP
    D: Stuffed baked potatow/core veggies
    S: Applesauce maybe or glass of milk

    b: fruit plate, part of an over/easy egg
    l: cottage cheese
    d: Enchilada soup, taco - ff shells (2 allowance points)
    s: popcorn
