Default Day 2

Today is day 2 of my trying the SBD for the first time. I am excited.

I had scrambled eggs with onion (a little) and mushroom for breakfast.

Snack was a string cheese and 1 boiled egg.

Lunch was a serving of taco bake and side salad.

So far so good.

Sounds like a day of nice food!! I really like the sound of that taco bake but it looked like abit of an effort to make, is it?

It actually was not an effort at all. It was very simple...loved loved loved it!!! You should definitely give it a try, awesome recipe.

Looks like you are doing great! I want to try that taco bake...it sounds similar to something I make sometimes while not on SB and my family always gobbles it up.

I make the taco bake about once a week. I vary what I put into it for veggies. You can change the recipe around and try adding different things. I always use ground lean turkey breast instead of beef and sometimes use a can of beans on the bottom instead of refried beans. Sometimes I add mushrooms, sometimes grated zucchini.

Making the taco bake is definitely a must have/try. I love it!

@murphmitch I did put a can of beans in the bottom instead of the refriend beans, DELICOUS. I have to try adding veggies, that sounds yummy.

One thing about this taco bake that I must warn about, it is so good, you have to stop yourself

I pile a ton of salad ingredients on top and sometimes a bit of RF sour cream, salsa too. I eat 1/4 of the recipe and am pretty full.
