Whole wheat penne with ground beef, homemade spaghetti sauce with some grated/shredded carrots, onions, and spinach in it. Oh of course, 1 or 2 slices of the obligatory garlic bread to go with it.

I had an early dinner, it was a chicken brochette from a Greek restaurant I love here, and salad. No dressing or feta cheese on my salad and I fought the temptation that came with the garlic bread

A really dodgy soya bean-tomato sauce over wholewheat pasta - the beans were still hard & crunchy, in spite of lots of soaking & boiling. Any tips for cooking dried beans so they are non-crunchy?

I'm making tacos. I still haven't decided whether I'm going to have one or just opt out and make something I will KNOW the calorie content of. I'm sure I can add each corn tortilla, probably even eye the content of the hamburger/refried beans/etc...but with the oil I cook the shells with, it just seems like too much work. haha. My bf has it made!

Shredded buffalo chicken "taco salads" tonight. I'll be baking a flatout light to get it crispy and using that as the shell...we'll see how it goes!

Last night we had Subway for dinner.. Turkey & cheese with lettuce, tomato and banana peppers. Just didn't feel like cooking and that was the healthiest alternative I could think of.

Tonight, I'm not sure what we're having yet but I'm currently searching recipes on here and on skinnytaste.com to figure out what to buy for the week.

1/2 block of extra firm tofu, a bunch of bok choy and some onions with a little hoisin sauce, and then 2 oz of angel hair pasta mixed in at the end. I wish I knew how to get the flavors better. But it was filling, full of protein and under 500 calories so yay!

Pork chops with homemade spicy breadcrumbs shake 'n' bake style, baked red potatoes with a little bit of butter and sour cream, and large ears of bi-color corn with some of my butter/cajun seasoning/garlic & herb mixture. Yum!

Tostada with meat, beans, rice, avocado, bell pepper, onion, lettuce, sour cream and hot sauce. On paper it sounds sort of average, but really it was delicious! I limited the meat, beans and rice to abt 2Tbs each, and I weighed the avocado. Used light sour cream and a ton of lettuce - maybe 3 cups. Total caloies abt 450. Because I still had some calories to spend, I had a 1/2 cup serving of light cookie dough ice cream for 130 cal. Very satisfying meal.

tacos! 3 oz ground beef sauteed with mushrooms and zucchini and taco sauce. Then put in 2 corn tortillas with avocado and sour cream on top.

Clocked in at about 400 calories. (Had some cheese and crackers before hand to bring it up to 500.)

Superlazy today so I am just making a prepackaged broccoli 'n' macaroni cheese with a can of tuna and some extra chopped broccoli and cauliflower mixed in.
