Yeah for you.. Sometimes it is so frustrating, but hang in there, as it all works out and works out well. I am happy for you.

Hi everyone I hope you are all doing well and staying OP. Someone asked about the brownie recipie - it is posted under the recipie link at the top of the page.

It has been a rough week - my endocrinologist lowered my thryoid medication dose on Monday and I can tell. I have been tired, cold and hungry. My weight was up 6 lbs - I think that once my body adjusts to the lower dose the weight will come of, but I'm so tempted to go off plan right now and have a nice little pitty party. It is a good thing that I don't keep off plan foods in the house!

On a positive note - we had a church pot luck today and I stayed 100% on plan! Yeah!! I made a porkloin in the crockpot with diet cherry limeade and then cooked some black quinoa in diet cherry limade, combined the 2 and it tasted wonderful.

Hoping to prove my endocrinologist wrong starting this week - he said it would be "much more difficult" to lose weight with this medication adjustment. I see him at the end of October and I plan to be much smaller at that appointment.

That brownie recipe has been a lifesaver for me for the last month!

The fact that you aren't going off-plan and having a pity party with food shows just how far you've come in this journey. You should be extremely proud of yourself!

I am intrigued by the idea cooking of the pork loin and quinoa with cherry limeade. First off, where do you get cherry limeade? Secondly--what does pork loin and quinoa cooked in cherry limeade taste like? I've heard of cooking meat in coca-cola, but never in cherry limeade.

I'm so excited.....yesterday I went clothes shopping and was able to "slip" right into a size 10 jean!! I have NEVER been able to slip into Anything!!

I'm not a huge shopper, but there was a huge sale at a store where I had a gift card. What a Motivator, I'd recommend it for all of you. I'm now encouraged to workout even harder this afternoon! :-)

The quinoa tasted nutty with a hint of cherry and the pork still had a pork flavor with a hint of cherry. The cherry limade was from Walmart in the Pop section. . . it does not say "diet" but it has 0 calories and very, very low sodium. - Diet cherry 7-up would also work.

Quinoa recipie - I recommend using either red or black quinoa as it has more flavor. For 1/4 c dry quinoa you will need about 1/2-3/4 c cherry limade.

Rinse the quinoa with water and add to a dry (no oil or cooking spray) skillet and "toast" on high for about 5 minutes (makes it taste nutty). Add cherry limade and bring to a boil. Cover and cook 7-10 minutes, remove lid and cook until the liquid is absorbed and little "green sprout type things" come out of the quinoa (about 5-10 minutes).

Pork loin - trim the pork loin of visible fat and sear off all sides in a hot pan that has been sprayed with cooking spray. In a crockpot add enough cherry limade to have about 1/2 inch of it in the bottom of the crock pot. Sprinkle in some cinnamon and cloves. Add the pork to the crock pot and cook on low until shreads easily (3 lb roast will take 3-4 hours - but it is nearly impossible over cook this - just don't let the liquid completely evaporate). For a stronger cherry flavor you could add 1TB of cherry extract (Baking isle) to the cherry limade - or some fresh lime juice if you want it a bit more tart.

This was good served hot, room temperature and even cold.

I will join the mini goal. hoping for 184 or more by end of month. weigh in yesterday and lost .5 lbs not much but better then gainning and it was over the weekend the hardest time for me to stay on track.
