Sorry I forgot to post this! I just copied it from my blog which my family use but the site won't let me send a link. Use the fat free version of yoghurt etc (if using to accompany) and you will be fine.
The receipe is:
Ingredients
- 2 medium sized butternut squash, peeled and cubed
- 1 large onion chopped
- 2 cloves of garlic chopped (no need to mince as it gets whizzed later)
- vegetable stock (vegetable boullion is good), probably about 2 pints but you can add more until you get the consistency you like.
Simply soften the onions in either some butter or if you’re dieting (like me) in Fry Light. Then, add the squash, stock and garlic and bring to the boil then simmer for 15 minutes or until the squash is soft.
Puree using a hand blender (can be done directly in the pan) until smooth.
Ready to serve!
Optional: A blob of yoghurt and cream is lovely but adds calories. Also delicious with shaved parmesan cheese or chopped coriander leaves.
Suitable for vegetarians!
This soup is super easy to make and delicious – it’s almost like a puree, and its really healthy and filling!
Also, squash is a "Speed Food" so you not only feel full, but lose weight quick too.
