The broccoslaw is the easiest!! lol You can get a bag of the broccoli coleslaw or broccoli medley in the bagged salad section of the grocery store. I just add a blob of miracle whip to it, and some bacon bits and thats my lunch with a piece of meat. Its GREAT for the fibre intake. This is the first time Ive been "regular" on Atkins!!
Curried Meatballs.......well, this is one of my own recipes and of course I dont measure anything, but from what I remember you throwing a soup together with blue cheese in it, you will be able to fix it up just fine.
Meatballs.....ground beef, parm cheese, salt & pepper, worchestire sauce, curry and anything else you might think would go good with curry!!!
Roll them up, with a bit of olive oil, and fry in pan until all sides are a nice brown colour.....put them in a pan and set aside
Curry Sauce.....can of cream of mushroom soup.....as much curry as you like...I usually put 6-8 tablespoons in it.(the meat balls soak up alot of the sauce) worchestire sauce(couple shakes of the bottle), ketchup(very little, just enough to say you put some in) soy sauce (couple shakes of the bottle), salt and pepper. Heat that up until its nice and hot....and pour over your meatballs, put in the oven at 350 for about an hour. Turn the meatballs over 1/2 way thru.
