One of my new favorite dishes:
Chayote Casserole

1 Medium Chayote
4 - 8oz of lean turkey (you can sub ground beef)
1 small / medium red onion
2 cloves garlic
2 stalks green onion
Cilantro (fresh) - handful, chopped
1t coconut oil
Garlic power - just a sprinkle
Salt / pepper

Peel and half the chayote - remove the pit and cut into thin slices - size is personal preference - I then half the thin slices but don't believe it makes a difference cooking (but the thickness does)
Dice 1/4 of the red onion & 2 cloves of garlic
Also, dice your 2 stalks green onion and cilantro
Preheat your skillet on medium heat - add 1t coconut oil - a couple spritzes of olive oil are fine too - allow to melt and add onion / garlic for a minute / 1.5 minutes - do not allow onions to caramelize
Add sliced chayote, sprinkle with garlic powder & a little salt / pepper (to your taste)
In another skillet, over medium high / high heat, add ground turkey, green onion, cilantro, a little salt/pepper and lightly brown together.
As the turkey browns, the chayote will continue to cook & get softer
Once browned, add meat to your now softened chayote and continue to cook for another 3 - 5 minutes

Thanks for the recipe Hysteria. It's only my second weeks so I have eased in -- basically lacked any creativity! I am about to head to the beach for a week with my family on Friday, but once I get back, I plan on experimenting with some recipes!! This looks like a good one!

Today...

B: Choc Shake, Coffee
L: *was going to be zucchini, cucumbers and a protein bar but I left it on the kitchen counter! So instead,it's a salad with veggies, egg and chicken from a local salad shop
S: "Cereal" (alternative product)
D: *was going to be Pork Chops, salad and either zucchini or cauliflower, but since I am eating my meal at lunch, I will sub in strawberry pudding instead of pork chops!

I had to be a bit flexible today as I had my lunch snafu but it seems I will still be able to stay OP!

@Great Dane - is there a reason you do your meat at breakfast? Just curious if it helps with hunger or energy, etc.

Last time I was on IP and hit a wall at 153-156lbs for 6 weeks, I changed over to my big meal at breakfast, smaller meal at lunch and then a drink dinner and my evening snack. It took about 2 weeks and then I finally started losing again. I like it because it's during the day time that I need my energy and calorie load, not at 7pm. I cook dinner for hubby and I, and immediately package mine up for breakfast in the morning. Pesto chicken salad always tastes better the second day anyway!
