I am travelling today which will make getting my veggies in a challenge. I am also turning my meals upside down, eating more early in the day vs. dinner as I am trying to break a plateau
Lunch was purple roasted purple cauliflower (salt+olive oil) and a Pumpkin Spice 'frappuchino' from the vanilla pudding mix, caramel syrup, spices. Yum!
Dinner tonite:
Seared scallops over basil/"pesto" zucchini "pasta"
I also had lunch with a friend (just had salad) and then later had my planned lunch (chicken salad w/2c. Veggies). It was great to have some social time (last-minute plans) and totally stay OP
B - RTD Strawberry-Banana
L - 2 cups fresh baby spinach, sautéed with some Pam, garnished with IP salt and ground cracked pepper and an IP peanut butter/chocolate bar
D - 4 whole eggs and 2 egg whites, scrambled with 2 cups of fresh spinach and 2 tsp EVOO. Added IP salt and pepper to taste
S - Haven't yet ate it, but probably dark chocolate pudding with leftover decaf for a mocha treat
B: RTE pudding
L: Salt & vinegar ridges & 1 cup cucumbers & 1 cup zucchini
D: Scrambled eggs w/1 cup spinach, 1/8 cup green salsa, & 1/2 cup mushrooms
S: Chocolate RTD made into a shake
ETA: Yeah for back up plans! Got a call to go rescue someone with a broken car - realized on the way I hadn't had breakfast and was hungry, opened the glove box and there was a RTE pudding, plastic spoon and napkin in a ziplock bag! Now, if I remember to restock the glove box....
