Before I began IP, I used Earth Balance made with olive oil. You can get it at Whole Foods, not sure where else...there are lots of good substitutes at Whole Foods that do not contain bad oils.
Is ICBINB lite spray acceptable? It's got 0 carbs & 0 fat. I'm new to IP (currently on day 5) and looking for good ways to flavor my veggies. I've tasted most of the WF dressings and am not impressed. In fact, the "diet aftertaste" is the only thing I'm having a hard time with so far.
The medical opinion on butter and saturated fat is quickly changing. Butter is delicious and is carb free. I would stick with it.
Read gary taubes blog, or his book why we get fat. He is quickly becoming the nutrition guru, and he clearly believes butter is "good".
Ha, I was just going to pop in here and say something similar. A bit of a google search turned up many diets and articles that say the real thing (in moderation) is better than a substitute.
