We have leftover brisket, so I'm probably making some kind of BBQ brisket pita pizza for the little one and maybe one for myself...

Breakfast for dinner week!

Tonight I made a homemade butternut squash/onion/kale hash with rosemary. Over that I served 2 slices of homemade dukan bread, 2 slices of tomatoes, a poached egg and Dukan hollandaise sauce.

Yum...and I am still full.

Tonight I have Thai curry beef (in the crockpot right now). All I have to do is throw in some jicama and broccoli that I've chopped and bagged already then head out to my daughter's parent teacher conference. When we get home it will be all ready.

We have to use up the brisket my husband made last weekend, so I'm making a BBQ brisket pita pizza for the little one, and I may eat some or may just skip it.

I love Jicama! I wish I could find it at more grocery stores out here in WA.

Tonight was Dukan French toast night, with fat free whipped topping, and Walden Farms sugar free pancake syrup....so good.

I went to four stores to find it. One of our Whole Foods carried it (the other, I'm not even sure!)

Tonight is not a cooking night. Leftover chicken pot pie soup, probably. I'm going to have to food saver and freeze a bunch of food we made this week. Whenever I get overzealous about our meal plans, my husband does too and we end up with crazy leftovers.

We have no meal plans this week because our freezer is TOO full of individual meals and with Thanksgiving coming up, we may need to use it when we repurpose all of the leftovers we will be sent home with.

I had extra peppers last week from a sausage pepper and onion dish with white wine that we didn't make. I froze the sausages, but had to use up the peppers and some produce.

I made some turkey, zucchini, and cauliflower enchilada cheesy stuffed peppers. Just under 170 calories each half and I plan to eat one for dinner.

Tonight will be roasted green beans and something with chicken cutlets. Maybe stuffed with zucchini and mozz. My daughter will have some egg noodles on the side, and likely husband too.

Shepherd's pie - I do a 50:50 mix of chopped mushroom with ground turkey before making my gravy, topping with veggies, and adding a 50:50 potato cauliflower mix on top.

Made it last night to throw in the oven today.

Munchy I did same thing with my shepherds pie last week on a snow day of work

Tonight we had spinach salad and steak/mushroom pasta w/light creamy sauce
