Smile Eating Seconds Quiche

Hi y'all...

I just made this Quiche it turned out sooooo good I had to share!

Ingredients:
12 oz of EggBeaters Egg Whites
3/4 cup of Low Fat Milk or Skim Milk
1/2 cup of chopped Onions or Green Onions and Chives
1 cup chopped fresh Broccoli (just the top part no stems)
1/4 cup of finely chopped Red Bell Pepper
1/2 cup chopped Mushrooms
1/2 cup chopped Zucchini and yellow Squash
1/2 cup chopped Baby Carrots
1/2 cup chopped fresh Green Beans
1/4 cup diced Sun-Dried Tomatoes (don’t leave out really enhances flavor!)
1 small “Roma” Tomato (firm) thin sliced (for topping)

Seasonings:
White Pepper or Black (I used White)
Mrs. Dash Table Blend
Molly McButter
Garlic Powder
Dried Basil Leaves

Pam Olive Oil Spray
Butter Spray (optional) use after baked only two pumps

Preheat oven to 350 degrees

Spray a square brownie pan/dish with Pam Olive Oil Spray set aside

In a mixing bowl add Egg Whites, Milk and all the Seasonings then beat together. Fold in all the Vegetables but NOT the Roma Tomato Slices. Pour into baking dish and then gently lay Roma Tomato Slices across the top. Then sprinkle Garlic Powder, Mrs. Dash and Basil lightly over the top of it and bake in oven for 50 to 60 minutes.

Stick a knife into the middle if it comes out clean its done.

Let stand for 10 minutes before cutting. Cut and serve if you want you can top with two pumps of Butter Spray.

Fat: 3
Protein: 12
Sorry don’t know what the fiber is but I imagine it’s a good amount.

I tried to make a quiche with egg beaters but it didn't turn out the way I expected. I will try this one.

WOW! I made this last night and it was absolutely delicious! I used fresh spinach, mushrooms, onions, and garlic and mixed in a tablespoon of veggie shreds. I am looking forward to making this again!

I think I could eat this every day!
