P1 Eggplant Parm
Eggplant parm is one of my fav's. After all the times I have fat smashed I can't believe it took me this long to figure out how to make it FS friendly!
Take a medium sized eggplant and cut it into thin slices
spray a frying pan with olive oil flavored cooking spray
in a small bowl mix together 2 egg whites and 1/4 cup of skim milk
dip the pieces of eggplant into egg mix and then put it in the frying pan
"fry" them until they are kind of soft and golden brown
Put the "fried" pieces of eggplant in a baking dish.
For the sauce I used 1/4 cup of all natural low sodium tomato sauce and chopped up some tomatoes mushrooms and onions and heated it on the stove for about 15 minutes.
Then I sprinkled about 2 tablespoons of veggie shred "cheese" on top of the eggplant and put some fresh spinach on top of that and then covered it with my sauce.
Bake for about 20 minutes on 350
