What's For Dinner?
 
A spin off from Tenoreo's post. :)

I enjoy cooking and am always on the hunt for new and exciting ideas and inspiration so I'm always interested in seeing what other people are eating. While I do have a few "go-to's", our menu rotation is constantly changing because both my husband and I like variety and big flavors.

Share what's on your dinner table tonight and lets keep each other from falling in to the "same-old, same-old" routine!

Tonight we are trying EatingWell's Honey-Soy Broiled Salmon only we'll be grilling it outside instead of broiling it. Also serving it with EatingWell's Spinach Salad with Japanese Ginger Dressing. Haven't decided on a starch/grain yet.

A few servings of spaghetti with low calorie spaghetti sauce, some blocks (you know those tiny ones) of low fat cheese, 1 small green apple in slices, and some grapes. Calorie total: 800/1500 I don't eat much during the day (though I do eat) because I am a night time eater-I eat dinner around 6pm. P.S. Your's sounds YUM.

I am always having a huge iceberg salad, tomatoes and onions... And then depending how I feel I either put in some kidney beans, or chicken or tuna or mushrooms...

two small yukon gold potatoes that are roasted, two six oz bison sirloins, fresh green beans, fresh button mushrooms and 2tbs of light alouette garlic and herb cheese and a glass of white wine. It's most of my day at 821 calories, but I'm looking forward to my steak dangit!

Hawaiian Chicken (Cooking Light recipe) with rice and a salad. I made up the marinade last night so it's been marinating all day.

The recipes all say things like "marinate for 4 hours". Like I'm free at 2:00pm to start marinating my dinner?

That Spinach salad with Japanese dressing sounds delicious--I'm going to have to try that!

I am a simple and boring cook. The husband just got a new job where he has to work second shift for a few weeks so it's just me for dinner

Two small corn tortillas with sauteed (olive oil) bell pepper/onion mix, black beans and guacamole. Also, a Japanese sweet potato with butter.

I am currently obsessed with avocado and sweet potatoes.

The Spinach Salad with Japanese Ginger Dressing we had the other night was a keeper!

Wednesday is always our buffet of leftovers since Thursday is trash day. If it didn't get eaten or frozen it gets tossed. Tonight was Portobello Pizza's and a small piece of Salmon from the other night along with salad fixin's.

This incredibly rice dish from my grandmother-in-law's work (she works at a country club-it has its benefits ;]) It's wild rice mixed with shiitake mushrooms, pinapple, avocado, onion, and tomato. I had no idea how to log it on Loseit, so I just said 1.5 cups of Fried Rice from Ricaroni, as it tasted like it had a bit of oil in it and would probably be closest.

Homemade hamburger patties with diced onion and mushroom in the mix, topped with dill havarti, hot sauce and white onion; steamed broccoli with homemade cheese sauce.

Tonight hot dogs (97% fat free) with buns. :D And tomorrow A few servings of Spaghetti with low fat sauce again AND kale chips-which are delicious by the way!

Recipe For Kale Chips (66 calories for 1 cup):
Cut the spine out and cut into 2 in pieces.
Take some olive oil and vinegar.
Drizzle over the kale and use your hands to distribute it evenly.
Lay out on foil line cookie sheet.
Put salt/pepper on kale.
Bake at 400 degrees F for 5 minutes.
Then take out and mix kale around with tongs.
Put back in for 5 more minutes until browned.
Cool and eat. :)

Tonight we're having Vegetarian Reubens from EatingWell and baby red smashed potatoes (not mashed...cooked then smashed flat and baked again until crispy) with sour cream and chive dipping sauce.

Teriyaki chicken breast (broiled), carrots, and quinoa always preceded by a tossed salad, and 1 8-oz glass of water. I use a no calorie/no carb dressing that I found in the diabetic section of the grocery store and use it liberally.

Butternut squash mac and cheese using FiberGourmet pasta. We cook the pasta, some chicken breast, onion, and some kale, then mix it all up with a sauce made with a little cheese, milk, and roasted butternut squash.

Thanks for the vegetarian reubens recipe. I am going to make that this weekend. It looks brilliant.

These were excellent!! The amount of filling was perfect for two hearty sandwiches (I used Pepperidge Farms Swirled Rye and Pumpernickel which are pretty big slices of bread) but the amount of dressing was a little too much. Next time I'll serve it on the side. I hope you like them as much as we did!

Hah, thanks for the tip! I don't like that much dressing anyway, so I'll be judicious with it. Am buying the ingredients this weekend and making it Sat or Sunday!

Tonight's dinner is hamburger. I bought some 90% lean beef and will make up burgers tonight and cook them in the George Foreman grill.

I bought extra meat, so I'll also make up a couple of meat loafs and put them in the freezer (uncooked). Then I can take them up the night before at dinner time, and by the time I get home from work, they're ready to cook.

I'll have to do some calculating to find out the calories in a meatloaf, but I think I can do it!

I'm doing a rif on these Barbecue Portobello Quesadilla's.

I have my own homemade dry rub and homemade BBQ sauce. I'm going to rub down the caps with the rub, grill them and give them a quick baste in the sauce then slice them up. I'll caramelize the onions in a skillet then mix them with the shrooms and make the quesadilla's. Serving with a side of homemade coleslaw.

Last night's BBQ'd Portobello's were delicious! We've found three new keeper recipes this week!

Tonight we're having Grilled Asian Drumsticks but I'm using thighs instead of legs. It's a Cooking Light recipe which is not one of our favorite resources of recipes but it has really good reviews. Will make another spinach salad to use up the last of the Japanese Ginger Dressing from a few nights ago and some wild rice.

Taco Salad - a flour tortilla cooked in the Perfect Tortilla pan to make a crispy shell, cross rib roast that has been slow-cooking all day with tomatoes, peppers, and spices, black beans, lettuce, zucchini, light sour cream, pico, and maybe some cheese.
