Since I really don't feel like going to the store after a 10 hour work day and a piano lesson...I'm going to make some chili with sausage and tons of beans and tomatos. Also thinking a side of brussel sprouts. Maybe some cheese? I have approximately 700 calories I can spend on dinner, so yeh, definitely some cheese :)

Last night: big salad, cooked zucchini, and pizza made on low-calorie, whole-grain tortillas with red-pepper feta spread, local goat cheese, and mozzerella. Delicious!

Yesteday I had a little less than 3oz of chicken breast (Skinless and boneless which is only 120-130 calories) with seasoning that my mom made. SO WORTH IT! Don't worry I cut the calories from today.

Today I am having mashed cauliflower with cheese. :D

I'm treating myself big time today. Now I am still staying within my calorie limits (1300) but I am going to save up half my calories through out the day so for dinner I can drive through our local Pizza Hut/Taco Bell and get a personal pan cheese pizza (590 calories)! YUM!!!

I actually made something new tonight on a whim and LOVED it. I have a george foreman style grill that you spray with cooking spray and throw whatever in it.

2 eggs (120cals)
Riced Cauliflower (1/2 cup-25 cals)
Red pepper (6 cals)
Kraft Feta Cheese with Basil (1/4 c. 90 cals)

Beaten in a bowl. Then dipped in:
Ketchup (2tbsp-40 cals)

301 Cals and it Filled me up! Might have it tomorrow on a slice of Ezekiel bread.. toasted of course :)

Last night I had zucchini "noodles" with crumbled hot turkey sausage in a low cal cheese sauce.

Tonight I'm making baked potato skins stuffed with shredded BBQ chicken (which I made at 3am in my crockpot...). We will somewhat hollow the potatoes out, top them with some cheese and scallions, and maybe eat it with salad or some kind of slaw.

Yesterday:

- baked potato, grilled portabello mushroom, roasted brussels sprouts, salad and strawberries with frozen yogurt and those yellow sponge cake dessert shells.

Planned for tonight:

Salad with all local greens + some edible flowers

Vegetable enchiladas: zucchini, onions, squash and green pepper cooked with spices/salsa as the filling, corn tortillas and queso fresco, topped with garlic-lime salsa/green enchilada sauce and a bit of cheddar cheese.

Last night I made an Indian flavored chili, with extra lean ground beef, onions, peppers, okra, tomatoes, green chilies, curry paste and all sorts of Indian spices like cumin, turmeric, coriander, garam masala, ginger -- and them some typical spices such as chili powder, garlic powder, onion powder, salt and pepper. I ate it with some Fage' 0% Greek yogurt (as you would eat sour cream with chili). It came out really good. I'll definitely be making that again.

Dinner last night ~ Sloppy joes (99% lean turkey, onions, celery, green pepper, carrots) on Paleo almond bread, grapefruit, 1 cup ice cream (about 1,000 calories)

Tonight ~ Crockpot chili (99% lean turkey, onions, celery, green pepper, carrots, chili spices), chocolate w/ orange, mini turkey & veggie meatloaf, 3 dates (700 calories)

Tomorrow ~ caulifower, broccoli, ham, and cheese soup (don't know the calories til I make it), probably some chocolate or a 1/2 c ice cream

Dinner last night was chicken divan (lightened up) with brown rice. Tonight will be dinner out as we will be in Boston for dr's visits/test from noon till 5. UGH.
