Tonight we're having Chicken Tostada's. I whipped up a simple marinade for the chicken and later we'll grill it. Will toast whole wheat tortillas and top them with the chicken, avocado something-or-other (still debating on how I want it, maybe plain, maybe made in to guacamole), tomato, onion, lettuce, cheese, sour cream. And since we have several tomatoes to use up, sliced tomatoes on the side.

Tonight is hot Italian turkey sausage with caramelized onions and roasted red and yellow peppers over brown rice. I have healthy blueberry baked oatmeal in the oven if we want a little dessert! (It's for breakfast, but DH loves it with a little whipped topping:) )

Because the Pats are on, I'm doing my own little snacking tailgate.

A bit of wine, cheddar cheese cubes, celery sticks and raw cauliflower with lowfat blue cheese dressing for dip, some rotisserie chicken and possibly a lean cuisine spinach artichoke dip with pita bread that's only 200 calories. I ate lightly today, so I have 700 calories to play with for my snacking dinner. So far have used 350 on wine and cheese, leaving 350 for food.

I did the vegetarian reuben last night, and it was super delicious. I have leftovers and will have them another night. I served them with a mashed potato/parsnip/rutabaga casserole from Epicurious. Had local turnips so I added them to the mix. Used about 1/2 the quantities in that recipe, and NO butter at all (the original recipe calls for 1.5 sticks! what on earth!). Instead, I mashed the veggies with the cooking liquid and a bit of skim milk. Topped with caramelized onions. Still tasty. :)

Oh, and I made a broccoli/root vegetable soup with the leftover cooking liquid.

Tonight it's lean ground beef nachos with lots of veggies on top. I'm thinking of taking whole wheat tortills, though, and toasting myself a tortilla bowl to make a taco salad up instead and let everyone else have the nachos. I made a nice batch of Pioneer Woman's restaurant salsa yesterday, and it is TASTY. We love it.

I also bought an extra pound of jalapenos, too. Found a recipe for cornbread stuffed jalapenos (instead of making the cream cheese filled ones) for a healthier version of something tasty and spicy. Can't wait to do this later this week!

We are having my version of a healthy burrito tonite .... I made a fresh pot of pinto beans this morning, so I am re-frying them in their own bean juice (instead of lard/oil) along with tomato, garlic & onion. I'm also gonna fry up some lean ground turkey w/bell pepper, and add dry taco spices like cumin, chili powder, etc. I'll wrap both the beans & turkey in wheat tortillas, along with NF feta, fresh onion & cilantro, a squeeze of lemon, and a splash of homemade chile (aka Salsa).

I LOVE burritos and this one is super healthy and delish!! Sometimes I throw a dab of NF plain yogurt (seasoned with dry spices) as the "sour cream." My hubby gags at just the smell of any yogurt, but when I make these he doesn't know the difference LOL!!

I was craving pasta tonight and didn't feel like actually cooking, so had a Weight watchers Ravioli Florentine, a package of green beans with almonds and half of a giant fuji apple.....while waiting for the ravioli to cook I also had a cube of cheddar cheese and a small glass of red wine. Tomorrow is weigh-in day.

Last night we had Boca Burgers and oven fries. Tonight is Cilantro-Lime Chicken with Avocado Salsa. We've had this before and really enjoy it. I'll serve it with wild rice and broccoli.

Hey Radiojane I see you are also from Saskatchewan! Just wondering where you find Spaghetti Squash! I don't think I have ever seen it (although I really haven't looked that hard yet!) but I am interested in giving it a try!


And for Dinner tonight is likely going to be chicken and whatever else I can scrounge up!

Tonight we're going out for Lebanese food. I did some googling and checking and think I have reasonable estimated calories for a full meal for me. It's a casual a la carte place, so I've decided to have a kebbe ball, fattoush, and one piece of spanikopita.

This is new to me, but I'm going to try to enter the day's planned eating into myFitnessPal in advance (as in the night before or at breakfast) so that I have a plan for the day and a full picture of what I'm planning on eating--and to give me power to not deviate from the plan.

My DH is off today, so I assuming he's cooking. If he's too busy, I'll figure something our when I get home from work. Maybe Cajun chicken and quinoa, with roasted peppers and broccoli.

That Cilantro Lime chicken sounds good! I'm bookmarking that too.

I have a seafood soup simmering away should be ready in a few min. I stole a taste and it's pretty good and very easy too.

I just sautéed two cloves of garlic and two big chopped potatoes in a tablespoon of olive oil over medium heat for about five minutes. Added half a cup of white wine and let it simmer five more minutes, covered. Then added can of chicken broth, can of Rotel diced tomatoes with chili and 2/3 of a big can of crushed tomatoes. Let that simmer about ten more minutes covered to cook the potatoes. Then I added 1/3 of a pound of fresh cod, 1/3 lb of fresh sole, and 1/3 pound of shrimp with shells on. Cooking for about 5-7 minutes and it will be done. Should get three or four servings out of this.

Well, my husband was off today and we went out to lunch and I splurged..went to Grimaldi's and I had 1 and 1/2 slices of pizza(Italian sausage) and about half a slice of butterscotch toffee cheesecake. I don't think I even want to know how many calories that was!

Then my husband ended up needing to go into work for a few hours, so I am sitting here eating an apple..don't really like it though so I think I'm stopping with the half I ate-and I'm glad I also bought Honeycrisp and Fuji apples, this is a Gala and I am not impressed.

If I get hungry at some point I may eat a little something...I'm not too worried about my lunch splurge today, I am calorie cycling and today was my higher calorie day. But I am weighing in tomorrow(Thursdays are my "official" weigh in day), so it may not have been the best idea to go out to eat today! LOL

Tonight we're having Refried Bean Poblano's with Cheese I have just enough wild rice leftover that I added peppers, onion and spices to for the stuffing instead of the plain rice the recipe suggests.

Buffalo chicken (made with a little Greek yogurt instead of the creme cheese) with carrots over brown rice. DH and kids skipped the rice and had tortilla chips.

Chipotle chicken breast strips, cilantro lemon-lime brown rice, spicy black beans, grilled onions/bell peppers, greek yogurt, guacamole, and of course the obligatory tabasco with a few lime tortilla chips on the side.

This took care of my craving for a chicken bol from Chipotle- healthier and cheaper too!

Stuffed Green peppers (stuffed with ground turkey, a little brown rice, and LOTS of diced cooked carrots/celery. Throw a tablespoon of shredded cheese and one and a half tablespoons of spaghetti sauce and there you have it. So good!)

Quorn "Turk'y" burgers (these are really good! Made from fungus rather than soy), with rutabaga fries, a few regular frozen shoestring fries, baked, roasted broccoli, spinach salad, and a hearts of palm / avocado salad.

(Which is basically: 1 can hearts of palm; 1 avocado, both cut up, dressed with the juice of 1 lime and a handful of chopped cilantro.)

I had a small glass of red wine, an everything bagel thin with a little butter and a bowl of seafood soup (cod and shrimp in a tomato base with onions and roasted cauliflower). 100 cal bag of sea salt almonds for dessert. :)
