Chicken livers with caramelized onions, over a blend of mashed potatoes/cauliflower. Not the lowest calorie meal, but I try to make a point of eating liver about twice a month now for the giant vitamin infusion!

caramelized (sp?) onion, cheese and broccoli frittata (made with half egg whites, half whole eggs) and a big salad.

We had taco salads--taco meat on a big bed of lettuce with tomato, green onion, and cheese. (Slightly less cheese for me, of course) On the side, we had strawberries and blueberries.

First dinner- Chicken, broccoli and fiber penne pasta with a 50-50 mix of cauliflower alfredo and jarred alfredo sauce.

Second dinner- 1 can of chunk light tuna with cracked black pepper mayo, spicy brown mustard, hard boiled egg, spicy pickles and some splenda. Oh yea, some chips on the side.

Last night we had Portobello Pizza's.

Tonight is Mediterranean Portobello Burgers. Instead of Sourdough I found some whole Grain Oatmeal Bread. Gonna make a huge Greek Salad and homemade dressing to eat from for a few days so that will be on the side.

Ground turkey cooked with tomatoes, onion, and spices with whole wheat couscous and veggies. And a cup of hot chocolate for dessert!

Slow Baked Spanish Chicken. Chicken thighs cooked in tomatoes and onions with red wine vinegar, olive oil, Spanish Sherry and spices. Crusty Bread and Greek Salad on the side. Ohhhh So Good! :)

I was supposed to do it last night, but this morning I put together the week's meal plan. I'm not an exciting cook, but we're eating a lot of fresh veggies and fruit.

Tonight: Rotisserie chicken, stuffing, salad, fruit
Tuesday: Ribeye, baked potato, salad, fruit
Wednesday: Tortelli, marinara sauce, salad, fruit
Thursday: Taco salad, fruit
Friday: leftovers
Saturday: (frozen) Chicken Cordon Bleu, rice, salad, fruit
Sunday: out to Applebee's

Looking at those, they don't sound like low-calorie choices, but they fit into my plan as long as I measure everything. I plate up the food in the kitchen and that's all I get.

It started out often not looking like "enough food" but I'm finding that as I accept a re-defined "serving size", I'm perfectly happy with what is advertised as a serving. I've been getting an awakening in the difference between what is labeled as a serving and what I was actually eating!
