Last night: vegetarian quesadilla (filling: yellow squash, onion, zucchini sauteed with some salsa, + cheese), roasted asparagus, big salad.
Tonight: salad, provolone/veggie wraps, and uh, movie popcorn. A SMALL. NO BUTTER. |

Last night: vegetarian reubens! The recipe I got from someone on this thread earlier in the year. Love them so much. I just find the messy, sloppy, ridiculously low-calorie sandwich (I don't use much sauce and use a nice low-cal dill rye bread, so the whole thing is under 300 calories) ridiculously messy, delicious, satisfying and easy.

Lemon pepper chicken with bow-tie pasta in parmesan avocado "alfredo" and steamed green beans. So good!
Avocado "alfredo" sauce in case anyone is curious- greek yogurt/cottage cheese/broth/parmesan cheese/minced garlic mixed in with mashed avocado and lemon juice- SO easy and something I just made up, lol. |
Tonight is a definite 'not sure'!
I normally (as in, for the last two months) make my meal plan and shopping list Sunday night and didn't get it done last night. Our usual Monday night dinner is rotisserie chicken, mashed potatoes, and a salad, so I may just stick with that and then figure out the rest of the week at the store--or re-use a previous week's menu! |

Thanks, mnemosyne! I was pleasantly surprised at how light yet creamy the pasta was and I didn't feel so "heavy" afterwards, kwim?
Tonight's dinner will be "shepherd's pie"- ground beef with turkey gravy and some onions mixed in with garlic mashed potatoes on top then baked. Maybe a little bit of cheese on top. Steamed veggies for me and some corn on the side for everyone else. |
A plate full of spring greens with chopped cucumber
A few Shrimp grilled on a skewer with onions A grilled pear. I opened the pear, it was not ripe and what to do?? I decided to try grilling and it was delicious. I brushed the shrimp with a little evoo. Towards the end of cooking, I brushed the shrimp and pear with 1 T Trader Joe's spicy peanut sauce (35 cal). Sliced the pear and piled everything on the plate of greens. There was something about the combination that was really outstanding, despite the fact that I don't usually eat grilled pears. Cooking the pear sweetened it up a bit as did the dressing. Yum and very low calories. |

I'm making a homemade burrito bowl with fajita seasoned chicken, fiesta lime rice, grilled peppers, and a small amount of shredded cheese.
