We are not "soup people" but we got our typical February Freeze blast down here in Florida over the weekend and definitely needed something to warm our water-thin blood and bones. This Quick Beef and Barley Soup was absolutely delicious! If you're looking for something quick and tasty on a cold day it's a winner! We had it for lunch and dinner yesterday and there's enough for each of us to have about 1 cup with a sandwich for dinner again tonight.

I made this recipe for Broccoli Pesto. I spooned the pesto over boneless chicken breasts, sprinkled with mozzarella, and baked. I served it with roasted green beans. Very delicious dinner! :hungry:

Ground Sirloin meatballs (meat, egg, spices and parm cheese) Rao's Marinara (3 carbs per 1/4 cup and yummy) and fresh Mozz cheese. OOOHHHH YUM YUM YUM oh green beans too LOL after thought

Mixed greens salad w/ 1/4 of a leftover buckwheat crepe (w/ leeks, onions, and brie). Not the healthiest thing ever, but my boss bought my lunch and I hate to waste food! I'm going to the gym in a few hours so I'm sure it won't be too bad. :)

Mixed greens with cottage cheese for my dressing and green peppers and onions sauteed in olive oil with melted sharp cheddar cheese. With two thinmints (I ate those first so the aftertaste was quickly replaced with my dinner so I didn't crave anymore)

Apparently I was in a cheese mood today lol

Salad (romaine lettuce, chopped cabbage, parsley, carrot, green onions, cucumber, celery.) and whole wheat gnocchi with a chunky sauce eggplant, onion, green pepper and baby portobello mushrooms stirfried and then cooked with 1 can diced tomatoes, with basil, salt, garlic, oregano, et cetera.
