Yummy dinners all around! I ended up having 3 oz of pork chop, broccoli, and roasted potatoes.

Lavidasofa: I hear lentil a lot around the site but have no idea what it is. What is it? LOL.

Tonight I made ww penne pasta (3oz per portion) with sauteed broccoflower, zucchini, garlic, a bit of vermouth, fresh thyme , fresh parsley, and a tad bit of grated parm.

Ohhkay8~ Lentils are part of the legume family. It's somewhere between a bean and a split pea. They are kinda flat looking like a lens (which I think is what the name means in Latin or Greek.) They contain lots of iron, protein, and fiber. Plus, they don't require soaking and they cook quickly.

mmmmmm

I'm having baked blackened salmon (from sam's club- awesome) and 2 cups of fresh spicach with 1/2 c fresh red peppers and 0.25c feta and 1T of lite ceasar dressing... This is one of my favorite meals!! I'm getting giddy!!!

ha, you all make me feel so...non-domestic I hate cooking, so I'm actually REALLY glad we're so buy packing and moving that we've been eating out more. I'm pretty sure dinner tonight will be Subway

Boyfriend and I are going on vacation on friday and I have a lot of studying to do this week (finals) so we are clearing out the fridge. I am having a lf turkey sandwich, broccoli with cheese, and low fat mint choc chip ice cream for dessert....yum

I'm going out of town tomorrow, so with packing tonight, I think I'll be eating on the go. Probably a McDonald's salad. Their Asian salad is SOOO yummy, and great on calories, too.

Leftover Tamale Pie and ginormous green salad (lettuce, cucumbers, tomatoes, radishes, and low fat ranch dressing).

Tamale Pie
1 lb 95% lean ground beef
6 oz onions, diced (about 1 cup)
6 oz red pepper, diced (about 1 cup)
1 clove garlic
6 oz corn or creamed corn (about 1 1/4 cup)
1 cup salsa
8 oz tomato sauce
1 tsp cumin
1 tsp chili powder
1 tube pre-cooked polenta
4 oz reduced fat cheese (about 1/2 cup)

Saute beef with veggies except corn (onions through garlic) in a large skillet until beef is browned and onions are tender. Drain fat, if necessary.

Add corn and remaining ingredients, except polenta and cheese. Bring to boil and simmer until liquid is reduced.

Slice polenta thinly (you want about 36 slices--a cheese slicer works well for this). Spray a 2 qt square casserole dish with cooking spray. Layer meat mixture and polenta in casserole dish, beginning with 1/4 of the meat mixture and 1/3 of the polenta. Bake at 350 for about 45 minutes, until heated thoroughly. Sprinkle cheese on top and bake for a few minutes more, until cheese is melted.

Makes six servings at about 270 calories per serving (6g fat, 29g carbs, 25g protein).
