Yesterday was weird. Skipped breakfast, made a sausage, egg and cheese quiche and ate some about 11:30 or so; then had another piece about 2.

I made barbecued chicken thighs for dinner, ate two and then went into crazy snack world last night. I think part of it was that I took an Ambien to help me sleep. I did that unconscious eating thing big time...I don't clearly remember having an Atkins bar, pork rinds dipped in ranch, a bag of sugar-free Reese's cups (I remember the first four), two low-carb cheesecake muffins...I literally looked at the kitchen this morning and said, "What happened in here?"

Not so good and kind of scary. I'm not taking Ambien any more for a while...I woke up feeling full and bloated. Duh!

OK, I'm a slacker. Yesterday: coffee, ryans buffet (yep) strictly on plan except 4 bites mac n cheese at ryans - good salad, cooked cabbage, pulled pk no sauce, green beans, pepperoni, and steak until stuffed, plus 4 bites mac n cheese and some unsweet tea. Snack: Squirt to my mouth of chocolate whipped cream from the can

Today: few drinks coffee with cream, 2 servings green beans plus meatloaf and diet mt dew. Supper: Sophia Loren Chicken, italian veggies.

I don't think I want any Ambien sandy!!!

No, Kel. Ambien is definitely not a weight-loss drug! You've mentioned Sophia Loren chicken a couple of times. I don't have that recipe. I goggled it and came up with this link:

I found another Sophia Loren chicken. It's from a Suzanne Somer's site.

Sophia Loren Chicken

This is so good!!

Cut 6 boneless, skinless chicken breasts (about 3 lbs.) into finger-sized pieces. Set aside (wash your hands!)

Preheat oven to 350 degrees.

Combine 1 Cup (150 g) grated parmesan cheese (the canned kind) with 2 T. (8 g) dried parsley, 1 T. (3 g) dried oregano, 2 tsp. paprika, 1 tsp. salt and 1/2 tsp. pepper.

Line a 9" X 13" (22.5 X 32.5 cm) baking pan with foil.

Combine 1/2 Cup (120 ml) extra-virgin olive oil and 6 cloves minced garlic in another bowl. Dip each chicken finger in the olive oil, roll in the cheese/seasoning mixture, and arranged in the foil-lined pan.

Bake for 45 minutes. After removing from the oven, place the chicken fingers in shallow dish and pour hot sauce over chicken, thoroughly coating each piece. Grab a handful of napkins and enjoy.

Makes 6 servings, each with 364 calories; 24 g fat; 33 g protein; 3 g carbohydrate; 1 g dietary fiber; 2 g usable carbs.

NOTE: I have made this twice now. The first time, I didn't have any grated parmesan cheese, so I just used regular shredded cheese, and it worked fine. Both times, I needed twice as much cheese, spices, and olive oil than they specified here, and I had LESS chicken! So make sure you have enough of everything to double it if needed.

I didn't want it as messy or spicy, so I left off the hot sauce and it was still delicious.

I don't know why it says 45 minutes because it's done long before that (I may have a fast oven). You want to check a few pieces to make sure they are done and no longer pink, and cooked through, but you really don't want to over-bake them so they come out dry.

This was really delicious with the Fauxtatoes recipe...the oil and spices makes a kind of sauce that was great over them.

That's pretty close to mine - I posted what I do under your dinner recipes thread and the low carb recipes entree area both.

I hadn't realized how much we've been eating it lately! I guess we like it!

Sophia Loren Chicken

This is from Dana Carpender cookbk. To quote her: it's hot, spicy, and italian. I sometimes leave off the hot sauce and eat like ckn strips. I am listing the recipe with my tweaks.

3 lbs boneless, skinless chicken breast - cut into 1 inch fingers - I make some long ones
1 1/2 C cheap parmesan cheese - the powder in a can kind (recipe uses 1 C but it needed more)
2 tbs dried parsley
1 tbs dried oregano
2 tsp dried paprika
I omit the 1 tsp salt
1/2 tsp pepper
1/2 C EVOO
6 cloves garlic, minced (I run em through the mini blender with the EVOO)
1 C hot sauce - I just leave it on the side - recipe says to pour over the cooked chicken - DH doesn't like hot hot, so he dunks as he wants

Mix garlic/EVOO. I then throw all the chicken into it and squish around until coated (sometimes the night before). Mix cheese and spices in bowl. Dip chicken in cheese mix, bake at 350. Mine take about 40 mins - YMMV.

Recipe says to put em on a platter and pour the hot sauce over them. I don't.

Recipe also says about 2 net carbs per each of the 6 servings done without my tweaks. We just divy the strips up into about 6 servings to figure it out. Good 2nd day with a salad.

Please don't post recipes on this thread. It's great to share them, but please post your recipes on the "What's for Dinner?" thread. If you'll do that, I can get rid of signatures, weight trackers, avatars and other information I'd rather not have on the thread.

For purely selfish reasons, I want the "Recipes from "What's for Dinner?" to be easy to use and fast to scroll through. The shorter the post is, the better. I can also screen out duplicates, correct any errors, and generally keep the thread clean and organized.

(If you've already posted a recipe, please delete it and copy it to the "What's for Dinner?" thread)

Taco salad - meat, lettuce, salsa, jalapenos, cheese, black olives, sour cream - no chips or shell - 2 diet mt dews

Hardees Low carb 1/3 lb burger. delish. Cost too much. 1/2 large diet coke.

1 squirt plain whipped cream.

unsweet tea.

Considering a spoon of PB tonight for a snack. Maybe now....

Kind of a fattening day for me lol. Fridays are my "splurge" days.
2 cups of coffee with cream
2 servings nuts
2 boiled eggs
10 olives
and a TBS peanut butter

Probably BLT salad for dinner.

Hi there!

This seems like a fun thread. Maybe I will get some ideas. I am back on Atkins after a couple years off. It is taking me awhile to get my feel wet again. I do remember having no appetite in the very beginning on induction last time. I am back there again. Sorry if my menus seem pretty boring. I hope to learn some great stuff from you ladies.

BTW, I laughed out loud at the Ambien story. I used to take that stuff a few years back for a horrible case of insomnia.

Today I had a can of turkey mixed with mayo and pickles

Dinner is:

6 oz chicken
2 cups lettuce
Ken's Caesar (love it, 1 carb)

32 oz of water so far.

I need to eat more carbs. Luckily I bought a lot of veggies and new spices and herbs today. I'm going to look up some recipes today.
