Tonight's dinner will be cheesburger meatloaf with low carb ketchup and cream-cheesey broccoli....and crustless pumpkin pie topped w/low carb whipped cream for dessert (lol, I think I'm addicted!!!)

Made a beef stir fry using, shredded cabbage, sliced cauliflower, red bell pepper slivers, jalepeno slivers, green onions - tops and bottoms, celery, jicima, and zuccini...pretty delish :T

7 buffalo wings with ranch dipping sauce.

Sauted onion, mushrooms and chicken thighs and simmered in Alfredo sauce, served over spagetti squash, with sauteed zuchinni on the side. I call it alfredo chicken. Hubby loved it, but had bread on the side!

Tonight was spicey vegetable chicken soup.

Dinner was SOO good! I went to Raley's with my mom and went in search of a low-carb option...I found a cheese and broccoli soup that was 11 net carbs for 1 cup, so I ate 1/2 cup with some rotisserie chicken. The soup was incredible and very filling.

Last night's dinner was shrimp and broccoli stir fry and crustless pumpkin pie (the last of it :( )

Tonight's dinner will be a low-carb tuna casserole and cheesy broccoli/cauliflower mix.

islandchick1 11-18-2010 08:32 PM

I made some bacon and eggs. I feel like C~R~A~P. I am making some cauilflower soup for tomorrow (wish it was already made) :(

Tonight will be a plain old chicken caesar salad with romaine lettuce, shredded parmesan and Ken's Creamy Caesar dressing.

Dinner will be followed by lemon drop shots with splenda instead of sugar!!! Yummy!!!

I am a lemon nut. What are lemon drop shots? and how do you make them?

Plain or lemon- flavored vodka shot with a sugar-coated lemon slice, sometimes the shot glass rim is sugared too. Be careful. Low-carb eating means most people feel the effects of alcohol very quickly...I learned that the hard way last weekend. I'm on the wagon again.

I made Chicken Taco Bake for dinner last night. Delicious! The recipe's on "Recipes from 'What's for Dinner?'" It makes a lot, so I have another dinner and a lunch left. Yum!

I took shots of plain vodka and slices of lemon, and sprinkled splenda on the slices. Took the shots, then sucked on the lemons. Keep in mind you're only allotted 3-4 teaspoons of lemon juice (1 oz.) on induction.

sandyfanny 11-21-2010 03:44 PM

And the allotment of vodka is no ounces. We don't want to mislead anyone into thinking alcohol is a great idea on Induction. JerseyGyrl will smack us! It's awful to give up so many of my favorite bad habits at once.

You are absolutely right...alcohol is PROHIBITED during induction, that would be totally up to the individual. Since vodka has 0 carbs, I chose to indulge every once in a while. Also, since alcohol did not stall my weight loss on Atkins years ago....I choose to do it in MODERATION.

Once again, it is totally up to the individual. :)

Tonight's dinner:
Pot roast, mashed cauliflower and crustless pumpkin pie
